Cowboy caviar, also known as Texas caviar, is a vibrant bean salad that originally came out of the American South. Despite the name, there’s no actual caviar involved - just a colourful mix of beans, corn, peppers, and a punchy lime vinaigrette. It was first created as a fun and affordable alternative to traditional caviar, and it’s since become a staple at barbecues, potlucks, and picnics. Serve it as a dip with tortilla chips, or enjoy it as a side salad.

Was really good! After a hard day of work I almost turned to junkfood but made this instead from leftover veggies and cans. It was really satisfying and way better and healthier than chips!

Simple but delicious! We served it on top of a few baked sweet potatoes with some salsa and vegan sour cream.
