This was a smoothie my mum always made for me growing up, and to this day, it’s one of my all-time favourites. The magic is in the toasted shredded coconut - it brings out a deep, nutty flavour that just can’t be matched by coconut milk or yogurt. It gives the smoothie a subtle, grainy texture too that I personally love. If you prefer it a little smoother, just blend for a bit longer and let the blender do its thing.

Very simple, sweet and delicious! If you have a weak blender like mine, maybe soak the date beforehand because it weirdly had no problem with the frozen banana but it left some harder date bits.
