These are really tasty and satisfying! For me, I had a mixture of unsalted nuts that I used and worked out great. The mixture was a little too thick for my food processor to properly work with, so I thinned it out with a bit of water, but that unfortunately made the mixture difficult to form into balls. Not yet sure how to find the sweet spot!
I made this today as part of my meal prep. I wanted a different energy balls recipe, something I could share with my 1 year old. I added almond butter to make it extra soft. It was enjoyed including our toughest critics, a toddler in making π
One of my fav energy ball recipes!!! I might add the chocolate chips at the end so they end up whole in the final product! I just love the crunch of the chips :)

To eat as snacks at work for me and my husband. They are lovely, my husband is especially happy about them
My standing blender was too weak for the job because the paste is very thick. I used the manual blender and it did well. But I was afraid that the balls would be too dry and added a bit of blended orange. And it ended up too soft :p Still managed to roll them and coat in chia seeds in my case fortunately. I will trust the thickness next time π What options would you recommend to thicken the paste if needed?

Okay I prematurely judged these. I made these and the chocolate peanut butter stuffed date balls. While I do like the chocolate peanut butter ones better still, these are so good! I had tried the base before rolling it in coconut and the warmer temperature made the flavor of the dried fruit super strong which I donβt love. But after rolling in coconut and refrigerating them, they tasted so much better for whatever reason haha. I love both of the date ball recipes. Highly recommend either one. I made two double batches for my last few weeks of pregnancy and look forward to eating them every day!
These are sooo yummy β£οΈ The only bad thing is I canβt stop eating them! Amazing!
Tasty and kept well in the fridge.
