Nut butter stuffed dates have been a go-to snack for years and years. They're so simple and so delicious. This pretzel stuffed version has the most wonderful crunchy surprise in the middle, which makes it a really fun snack.

Ingredients

Optional garnish

  • flaked sea salt
  • melted dairy-free dark chocolate
  • unsweetened shredded coconut

Directions

Click:

  1. Using a sharp paring knife, make an incision along the length of each date, but try not to cut the date in half.
  2. Remove the pits from the dates.
  3. Using ½ a pretzel per date, break apart the pretzel and place the pieces inside the empty dates.
  4. Dollop the peanut butter over the pretzel, using a ½ teaspoon measure or a small spoon.
  5. If desired, drizzle the filled dates with melted chocolate or a sprinkle of sea salt or shredded coconut flakes. Enjoy!

Storage

  • Store these dates at room temperature in an airtight container for up to 3 days, or in the fridge for up to 2 weeks.
  • Note that if not enjoyed the same day, the pretzels will likely lose their crunch.

Made these today😊 I didn't have pretzels so I subbed it with some toasted pine nuts which was.. Interesting?😂I think if I were to go with nuts - toasted walnuts would've probably been better 😂😂
The dates + almond butter combo was delicious😍. I mixed some table salt with the almond butter so the seasoning is evenly spread out. Will definitely make again !
