The best recipe I have tried so far! I thought the others were good - now this has set a whole new bar hahaha I’m going to be making more of them and freezing them and bringing them with us when we go outdoor rock climbing! So convenient and healthy! Will be a boost of energy! It takes an hour to drive and then 40 min to walk to the crag just one way and so it’s a long time to go without eating as there is the way back as well and time to climb haha and fruit don’t fill us up. They weight hardly anything and won’t spoil. This can easily replace all those energy bars full of UPF that we see climbers bring with them. I’m super excited to share this with my husband when he comes home from work! He hates sweet stuff but I think he will love those! It’s the right amount of sweetness.

I love the flavor, texture, and consistency of these energy balls! I subbed for freeze-dried strawberries because that is what I had on hand. The red and white colors remind me of Christmas! I think I didn't chop up the freeze dried strawberries small enough for the dusting after making each ball, so I threw the mixture into the batter and rolled it in just coconut. Can't wait to enjoy a few of these and then freeze some for school lunch snacks!

Hey Catalina! You could use finely chopped dried fruit like cranberries, apricots, or cherries in place of freeze-dried fruit. They’ll add a nice chewy texture and sweetness ☺️

Really lovely and easy to make! I wanted something sweet to keep in the fridge to help minimise buying processed chocolate bars, etc., and these are great for that.
I think the raspberries are needed to cut through the sweetness of the cashew butter, so I wouldn't swap them or leave them out, but it depends on how sweet you like things!
