This cinnamon vanilla nut butter is my absolute new favourite dip for sliced apples. The taste of cinnamon, pecans, and vanilla together with the crunchy sweetness of apples is a match made in heaven! Alternatively, you can spread this nut butter onto some toast, or spoon it onto your morning oatmeal for a boost of flavour and nutrition.

Ingredients

  • 1½ cups (148 g)
    raw pecans
  • 1½ cups (195 g)
    raw cashews
  • 1 Tbsp (8 g)
    ground cinnamon
  • ¼ tsp
    salt

Directions

  1. Preheat the oven to 350°F (180°C)*. Spread the cashews on one baking tray, and the pecans on another. Toast for 7 minutes. Remove the pecan tray from the oven and set it aside to cool.
  2. Stir the cashews and return them to the oven to toast for an extra 5 minutes, or until lightly golden. Careful not to burn. When toasted, remove from the oven.
  3. To a food processor (ideally 600W or higher), add the toasted nuts, cinnamon, vanilla, and salt. Blend on high for 5 - 7 minutes until a smooth**.
  4. Transfer to a jar for storage. Enjoy!

Notes

  • * We used top and bottom heating (not fan-assisted/convection).
  • ** If your food processor isn't very powerful, blend for up to an extra 5 minutes or consider adding a bit of vegetable or coconut oil.

Hi, I have made this 4 times so good. I do store it in the refrigerate. my question is: I read that adding liquid like vanilla can thicken it up. What is your opinion? Sometimes it nice and smooth and other kinda hard after refrigerate. Also I read your do not need to refrigerate it if you use it in a couple of weeks. Thanks for your feed back.

Hey Barbara, aw we're glad you've been enjoying the Cinnamon Vanilla Nut Butter! Adding the extract can sometimes impact the thickness of nut butters. You could use the seeds from a vanilla bean, vanilla paste, or powder as alternatives.

For the texture, you can leave the nut butter out to soften before using if you find it too hard from the fridge. Alternatively, indeed you could store it an airtight container or mason jar in a cool, dry, and dark place for up to 1 month (although if it looks off or smells off before then, please toss it...). We personally prefer to store nut butters in the fridge so they stay for longer though 🤗

Delicious nut butter, perfect for spreading on apple or banana slices, all round hit with family! Used a Vitamix blender so wasn’t as creamy as picture, but mixed well with a tablespoon of coconut oil and patience. Perfect texture for our liking!

I do the same thing add maple syrup also. Sometimes after refrigerating it gets a little hard and read by add liquids like maple syrup and vanilla they are water based and can make the butter hard. Question do you refrigerate your's and has this ever happen to you.

I made this for Christmas the other year and its sooo delicious! Downside: took forever to make and I almost broke my parents' food processor. So maybe don't try this if you have a food processor from the 90's.

So, I was watching this video because we're getting a food processor (actually inspired by your Kitchen Essentials video and we're going for the Magimix too!) and I want to take advantage of it. Looks like an amazing recipe! But also, not sure if you're not using it because you don't want to or don't know about it, but the Blender ring that comes with the Magimix is supposed to be super useful when it comes to things like this. No need to scrape down the sides too often. Could be worth checking out?

Hey there, Eli, aw so glad the nut butters are being enjoyed! We haven't used almonds and sunflower seeds in this recipe, but we have had them mixed together before in another nut butter mix! If you give it a try, it will taste different so we'd recommend giving the spread a taste and adding more spices (such as cinnamon), vanilla, or syrup as needed 🙂

Hey guys! So I made it yesterday with sunflower seeds and almonds. U were right ab a slightly interesting flavour given by sunflower seeds, reminded me an eastern ‘halva’. Anyway following ur advice I added more cinnamon and to give it a sweeter touch some raisins (pulsed them a bit in the end together with the almost-ready butter mixture). Anyways it came out absolutely delicious, flavourful, decadent and with an exquisite aftertaste. Big thanks and hugs for encouraging experiments!❤️

I gifted this nut butter to several people last Christmas and some didn’t use it right away and still have it so the oil is accumulating on top. What is the shelf life of it in a Mason jar that had a lid but was not vacuum sealed or given a hot water bath? Thank you!

Hi Dianne, thanks for taking the time to share! Indeed a food processor is better suited for a dryer mixture, such as this. It may be possible to use a very high-powered blender with some added water or oil, although the nut butter will likely be a bit more chunky and we'd advise waiting for a food processor to ensure your blender doesn't break.

We hope you enjoy the recipe if you're able to give it a try in the future. In the meantime, perhaps adding vanilla, cinnamon, and salt to store-made cashew and pecan butter may be a fun way to experiment 🙂
