Looking for a quick and delicious summer snack?
I'm a big fan of freezing grapes for a quick grab-n-chew healthy snack when I'm working away in the summer. It keeps me cool, the natural sugars give me a boost of energy, it's loaded with antioxidants and some fibre too... goodness all around.
To vary it up sometimes, I like to make these frozen yogurt covered blueberries. It's an incredibly easy-to-make recipe it's also a great snack option for warmer months.

Frozen Yogurt Covered Blueberries
▸ ▹ Vegan, gluten-free, nut-free, oil-free, refined sugar-free
Yield: 2-3 servings
Prep Time: 3-5 min
Freezing Time: 20-30 min
Total Time: 35 min
1 cup (100 g) fresh blueberries
1/2 cup (125 ml) unsweetened plant-based yogurt (we used soy)
Gently mix the washed blueberries and yogurt together in a bowl.
Using a fork, drop the yogurt covered berries one-by-one onto a parchment lined baking sheet or plate.
Place the tray in the freezer.
In a single layer*, the berries should be frozen enough to handle in 20-30 minutes (depending on your freezer).
Peel the berries off the parchment paper and store them in an air-tight container in the freezer, or eat right away. Enjoy!
* We first freeze the blueberries in a single layer on a baking sheet or plate so they freeze individually before transferring it to a container for longer-term storage. We do this so the blueberries don't stick together; you can simply grab each piece and pop it into your mouth without needing to pry it off another piece.
Storage: can be kept in an air-tight container in the freezer for up to a month.
Variations: flavour the yogurt with cinnamon or maple syrup. Freeze other yogurt covered fruit, like grapes or strawberries.
