These fruity and refreshing popsicles make for the perfect snack or dessert in the warm spring and summer months. Only 4-ingredients required, and 100% kid approved!

Ingredients

  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • ½ cup (120 mL)
    pineapple juice
  • ½
    lime, juiced
  • ¾ cup (112 g)
    frozen raspberries
  • 3 Tbsp (45 mL)

Directions

  1. Add the coconut milk, pineapple juice, lime juice, and syrup to a pitcher. Mix.
  2. Pour this mixture into popsicle moulds until each well is about 80% full*. Place the mould into the freezer for 1 - 2 hours.
  3. Meanwhile, heat the frozen berries with the syrup in a saucepan until fully thawed. Mash slightly to release some of the juices. Alternatively, thaw in the microwave. Set aside to cool.
  4. After the 1 - 2 hours is up, remove the mold from the freezer and spoon the raspberry mixture onto the popsicles.
  5. Use a popsicle stick to gently push the raspberries into the popsicle to create a swirl pattern. Then position the sticks in the center of the mould and return to the freezer*. Let freeze completely.
  6. When you want to remove a popsicle, run the bottom of the mould under hot water to help release the popsicle. Enjoy!

Notes

  • * If you don't have a popsicle mould, use an ice cube tray to make mini popsicles.
  • * Tip: if the popsicle is too soft to hold the stick, return it to the freezer for 10 - 15 minutes more before trying again.

Storage

  • Store in the freezer for up to 1 month.

I get other people's comments that these are hard but we loved them! Fun to suck on and cool down during this hot aussie summer. Love that the kids are having these over the sugary stuff from the shops.

Huge fan of Sadia's recipes and was really excited about this one but, unfortunately, we didn't enjoy it. It was too hard to eat like a popsicle and really not sweet enough to enjoy. Maybe I did something wrong? I thought maybe its because the fruit were more near the bottom but we tried the bottom only too and still found it too sour. 🤔 Tips are welcome, especially if others have different experiences! Could also be personal preference.

Hey Diana, how disappointing to hear! The level of sweetness and tartness in these popsicles can vary depending on the ripeness of the fruit used. We prefer frozen raspberries because they're frozen at peak ripeness - was there any chance fresh fruit was used instead of frozen? It can also help a bunch to spread out the fruit mixture rather than have it concentrated in one place. Sometimes, when fruit clumps together the tartness builds up which can give a sour taste.

It might also be a personal preference. The pineapple juice was meant to offer some sweetness, but if you prefer sweeter treats, you can consider adding a bit of sweetener such as maple or agave syrup to the coconut milk mixture to help balance the flavours. I hope this helps for now and that you enjoy the popsicles more if you give them another try 🤗

I've made these popsicle twice, they are very delicious. I recommend frothing the coconut milk with a hand blender, it makes the popsicles a bit lighter and prevents bigger ice crystals from forming. I've tried them also with blueberries, but the raspberries are better with their bolder flavour.
