Directions

  1. Line a baking tray and preheat the oven to 325°F (160°C)*.
  2. Add all the dry ingredients to a large bowl and mix.
  3. Add the wet ingredients to a saucepan over medium-low heat and mix until smooth.
  4. Add the wet to the dry ingredients, mix well, then transfer to the lined baking tray.
  5. Spread everything out evenly, then bake on the centre rack of the oven for 22 - 25 minutes, stirring once halfway.
  6. Remove from the oven and let the granola cool completely. It will continue to harden as it cools. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
  • * We used top and bottom heating (not fan-assisted/convection).

I made this as healthy gift to my friends on their birthdays, put in a pretty jar with a nice ribbon. They REALLY loved it! Ate it in days XD!

I just swapped peanuts for nut mix for a bit more variety.

The only gripe I have with this recipe is Pure Vanilla Extract. I don't know if this is usually an affordable ingredient around the world, but here in Northern Europe it's like liquid gold. But maybe I should try leaving it out next time.

Really loving this granola myself too, I'm always looking forward to put a spoonfull on my frozen berry yogurt mix! Yuuuuuuum.

Honestly I underestimated how much better this would be than the store bought vegan/gluten free/sugar free peanut butter granola I had been using.

I've been eating this for breakfast for about 1.5 weeks now and I'm full for hours. On top of that I have fewer cravings for snacks.

For context, I mash a banana into my yogurt and add some tangy fruits like berries to balance out the sweetness from the maple syrup. 10/10 - thank you so much!!

As someone who is allergic to peanuts, I subbed the peanut butter with sunflower butter and the peanuts with cashews. And it’s a total keeper!!
