Peanut Granola

⅓ cup (85g)natural peanut butter
Directions
- Line a baking tray and preheat the oven to 325°F (160°C)*.
- Add all the dry ingredients to a large bowl and mix.
- Add the wet ingredients to a saucepan over medium-low heat and mix until smooth.
- Add the wet to the dry ingredients, mix well, then transfer to the lined baking tray.
- Spread everything out evenly, then bake on the centre rack of the oven for 22 to 25 minutes, stirring once halfway.
- Remove from the oven and let the granola cool completely. It will continue to harden as it cools. Enjoy!
Notes
- †Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
- * We used top and bottom heating (not fan-assisted/convection).
Storage
- Store sealed in an airtight container on the counter for up to 3 weeks.

Étonnant ! Je laissais traîner cette recette de granola dans mes recettes à tester, certainement à cause d'un aprioris ridicule sur le peu d'ingrédients et le peu de temps qu'il demandait par rapport aux autres, et un soir, j'avais besoin d'un granola pour le lendemain mais j'avais la flemme. Je me dis que c'est le moment d'enfin tester celui-ci. Quelle claque. Cela m'apprendra a être snob. Il n'existe aucune recette de granola que j'ai essayée sur PUL qui est aussi croustillante et efficace. Elle est rapide, elle n'est pas cher, et elle est bonne. Perso j'ai mis des cacahuètes grillées et salées (on fait avec ce qu'on à) et ça marche très bien.
Je me demande sincèrement pourquoi cette recette est enfin croustillante et pas les autres 🤔. J'ai peur de changer de graines ou d'ajouter des choses à cette recette pour m'amuser à la pimper un peu et de perdre ce croustillant qui change tout

Hi! I made this granola twice. It was easy and quick to make and my kids liked the peanut flavour. Today I made it the second time and now I used einkorn flakes (as I‘m allergic to oats), almond butter, chopped almonds and Alba oil. I replaced the cinnamon with one freshly grated tonka bean. It turned out very delicious :-)

Awesome taste, however it didn't turn out crispy. Still delicious but im wondering what I did wrong.
I made this as healthy gift to my friends on their birthdays, put in a pretty jar with a nice ribbon. They REALLY loved it! Ate it in days XD!
I just swapped peanuts for nut mix for a bit more variety.
The only gripe I have with this recipe is Pure Vanilla Extract. I don't know if this is usually an affordable ingredient around the world, but here in Northern Europe it's like liquid gold. But maybe I should try leaving it out next time.

Honestly I underestimated how much better this would be than the store bought vegan/gluten free/sugar free peanut butter granola I had been using.
I've been eating this for breakfast for about 1.5 weeks now and I'm full for hours. On top of that I have fewer cravings for snacks.
For context, I mash a banana into my yogurt and add some tangy fruits like berries to balance out the sweetness from the maple syrup. 10/10 - thank you so much!!
