Preheat oven to 350°F (180°C). In a medium bowl, mix together the maple syrup, coconut oil, salt, and cayenne.
Then add in the nuts and toss to coat. Transfer to a parchment-lined baking tray, and roast on the middle rack of the oven for 5 minutes.
Then remove from the oven, add the sesame seeds, toss to coat, and roast for another 5 - 7 minutes, or until lightly golden. The nuts continue to cook a little after being taken out of the oven and the mixture may still look wet but it will harden as it cools. Enjoy!
Notes
†Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.

I don’t know what I did wrong. But, these did not harden as I hoped. They stayed kind of sticky and gooey. They taste great- just a little messy. Mostly, I’ve been chopping them up and putting them on salads.

Hey Kitty, it sounds like the almonds might have needed a bit more time in the oven to harden, though it is true the outside does stay sticky. So glad the taste was still enjoyed 😊
Great combination! Not overly sweet, just right. I do make these on the stove, simply by heating a skillet with the syrup and coconut oil. When bubbles begin to form, I add the almonds and toast them for a couple of minutes. In the last minute or two, I add the sesame seeds (so they don't burn). Then I put the candied nuts on same parchement paper to harden.

Thanks so much for sharing your experience with the recipe, Ilse - it means so much 🤩
Hi! Could I add a handful of cashews to this? Or other nuts and make it a sorta trail mix with seseme seeds?

Hi Sripradha, a trail mix sounds fun! Feel free to roast the nuts together or on separate pans. We'd just recommend keeping a close eye on the tray(s) in case they roast quicker or slower. We hope you enjoy the recipe 😊

I tried it! It's really good... I've used only almonds for the first batch... A added a little more pepper than recommended.. :P (oh, if u want to see it, I've tagged you on instagram- but my account is private, I have no clue of you'll be able to- you know, that is, if you like looking at people making your recipes, that is... ) Anyway! Thank you team pul🥰

Thanks for the update, Sripradha, we're so thrilled to hear!
Amazing simple and delicious recipe! I had mostly made Tamari almonds before, this is a really nice way to mix it up. My first try was without the cayenne pepper, but I think next time I'll be more daring :)

So glad to hear, Janna! The cayenne pepper helps add a nice touch of spice 😃

Such a great recipe. Just the right amount of sweet and spicy. Now I need a video explaining how to stop eating finishing them off in one go <3
Amazing quick snack. Loved it. ❤❤❤

Delicious, luxurious, very easy and festive as soon as you put them in a Christmas bowl ✨
