I adore overnight oats, and am always looking to make new flavour combinations. Put in just a few minutes of work before bed, and breakfast will be waiting for you in the morning like a gift from your past self. This version makes good use of summer peaches, when they're at their juiciest and sweetest. A ripe peach gets blended into a soft, creamy base that the oats and chia soak up overnight, and then it's finished with fresh fruit and a scatter of pecans for a little crunch on top. The taste of summer in a jar.

Hii Nicole, so happy you enjoyed this one! Yep frozen peaches could work well. You can use them straight from frozen as they’ll thaw as the oats sit overnight. They'll release a little extra liquid as they thaw, so if the oats seem a touch thinner, you can add a spoonful more oats or chia seeds in the morning. Frozen peaches also vary a little in sweetness, so you can adjust the sweetness to taste if needed 🍑✨

Hi there, Carmen! Canned peaches should work just fine. We'd recommend choosing peaches packed in juice rather than syrup and draining them well before using. Since canned peaches are often a little softer and sweeter than fresh ones, the flavour may vary slightly. You also be able to use a touch less liquid. We hope you enjoy the recipe 🍑
