There are several stories circulating about the invention of 'buffalo sauce'. One story tells that this popular sauce was born in 1964 at a bar in Buffalo, New York, where the owner used this sauce to create tasty snacks for her son and his friends. Whether or not this is the real origin story of the buffalo sauce, we're thankful to its inventor, 'cuz the sauce is darn delicious!

Ingredients

Tofu base

  • 15.8 oz (450 g)
    extra firm tofu, pressed
  • ¼ cup (32 g)
    cornstarch
  • ½ cup (120 mL)
    unsweetened soy milk
  • ½ cup (54 g)
    breadcrumbs
  • 1 tsp (2 g)
    paprika powder
  • ½ tsp
    ground cumin
  • ½ tsp
    garlic powder
  • ¼ tsp
    ground black pepper

Buffalo sauce

Vegan ranch dip

  • ½ cup (120 mL)
    vegan mayonnaise
  • 2 Tbsp (30 mL)
    unsweetened soy milk
  • 1 Tbsp (6 g)
  • ½ Tbsp (7 mL)
    fresh lemon juice

Optional garnish

  • fresh chives

Directions

Click:

  1. Preheat the oven to 430°F (220°C).
  2. Press the tofu to drain off as much liquid as possible, then cut into sticks about 2 by ½ inch (5 cm by 1 cm) thick.
  3. Prepare 3 large shallow bowls: the first one with cornstarch; the second with milk; and the third with the mixture of bread crumbs, paprika powder, cumin, garlic powder, and pepper.
  4. Dip the tofu sticks in the cornstarch first, making sure to evenly coat it. Use your hands to brush off any clumps of cornstarch as we only want a thin layer coating the strips. 
  5. Then dunk the strips into the milk, letting any excess liquid drip off, before transferring the strips to the breadcrumb mixture. Roll to evenly coat.  
  6. Transfer the coated strips onto a parchment-lined baking tray. Bake in the centre rack of the oven for 25 - 30 minutes, or until the sticks are golden, flipping once halfway.  
  7. Next, make the buffalo sauce. To a large pan on medium-high heat, add the hot sauce, butter, and onion powder. Stir and cook until the butter has melted, then remove from the heat.   
  8. When the tofu sticks are finished baking, remove them from the oven. When they are still warm, but cool enough to handle, dip them into the buffalo sauce. Let any excess sauce drip off, before transferring the sticks to a serving plate. 
  9. To make the vegan ranch dip: mix all the ingredients in a bowl.
  10. Serve the buffalo tofu sticks with the vegan ranch, or serve them on mini tortillas with avocado, lettuce, and the ranch sauce drizzled overtop. Enjoy!

Been watching you for years!!! I would love to try this recipe today. Curious though, if you dip the tofu in the milk after coating the cornstarch, won't the cornstarch just wash away in the milk?

Hiya, Mika! When the tofu with cornstarch is dipped into the plant-milk it actually tends to clump up and get sticky rather than washing off. This is because of some cool science stuff related to thickening 🤓 We hope you enjoy the recipe if you're able to give it a try 😊

I don't like ranch so I made the tofu sticks for tortillas and it is amazing! Love that extra pinch of spicy and crunchy tofu mixed with vegetables! It also easy to make and you made a video that's easy to follow!

Just made the Buffalo strips for dinner. Yum! I put them in our air fryer tor 15 mins. The outside was crisp and the inside tender. Is that the way it’s supposed to taste?

Love this recipe. I’m not a vegan but I’m trying to eat healthier and love your recipes. ❤️

Hi Marilynn, thank you for sharing! We've never personally made them in an air fryer before, but find the inside isn't usually overly tender. Perhaps cutting smaller strips or using a lower temperature may be two ideas to try to get the inside more crunchy if desired 😃

I made this in a less-spicy version and I find they were better without the ranch-dip, which seemed a little too fat, probably because of the store-brought mayo...
