Sugar-Free Fudgy Two-Bite Brownies

Brownies should be full of chocolate flavour, moist, and chewy. They can't be too oily, dry, or overly sweet. Luckily, these are lovely little fudgy bites. The combination of nut butter and dates gives them a perfectly chewy texture and a rich flavour.

Ingredients

Directions

  1. Preheat the oven to 350°F (180°C). In a large bowl, combine the ground flaxseeds and milk. Set aside.
  2. In a food processor, add the roasted hazelnuts and dates and blend until smooth.
  3. Transfer the mixture to the large bowl as well, and add all the remaining ingredients. Mix until well combined.
  4. Line or oil a mini muffin tin, and spoon a tablespoon of batter into each well. Bake on the centre rack for 22 - 25 minutes or until the top is firm and a toothpick comes out clean.
  5. Allow to cool for a couple of minutes before removing from the tin. Enjoy!

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • Keeps frozen for up to 1 month.

Very good! Thought we had cocoa powder but we didn’t so I just used baking chocolate cocoa bar. They were yummy! Not super sweet but not overwhelmingly tart. It’s nice eating them and knowing they don’t have sugar :)

I’ve been making this recipe for every get together with friends and they always ask for the recipe. My only remark is to use high quality dates. When I made it with dates that were a bit harder the texture was different.

Hey Helen! We haven't tried so can't say with certainty. We'd recommend keeping a close eye on the pan since the batter thickness and ovens may vary. As a heads up, you may find these ones come out thinner than desired if opting for a regular pan, although forming little patties by hand and spreading out the batter should help. Let us know if you experiment with it! 🤗

Sugar free fudge 2-bite brownie Review;
I loved this. Very simple to make. I had dates remaining and didn't know what to do until found this recipe.
It's not sweet which normal brownies are. I love it!
My brother is vegan and will love this!
I didn't hv a mini cupcake (cc) pan and used a normal cc pan. Could I use a baking sheet and would it spread too much?

Yummmmy! These were so good. I love that they taste sweet and have a nice texture to them. I put some raspberries on them that really cut through the sweetness with some acidity ( Padama Lakshmi here 😉) but honestly, super simple to make.

Quick question though. What is the purpose of letting the flaxseeds rest in the water before mixing all ingredients together.

Hi Susy! We're so happy the cookies were enjoyed. Letting the flaxseeds rest in water gives them time to absorb the water. This allows the mixture to thicken and gel, which is sometimes called a "flax egg", and helps with binding the brownies together. We hope this helps for now 🙂

I made the muffins for my son today. I used almond flour instead of grinding the Hazelnuts. I also leave out the chocolate chips. My 3 yo son couldn't get enough from them. They are very delicious, but little too sweet for me. I would take less dates next time. Thank you very much for all the recipes.!

Hi! I really like your healthy recipes and your harmony. Just a suggestion about this recipe - the measure for the dates, if you take 3/4 of a cup of dates (for me, 3), is not the same as 142gr of dates (which were 6 dates). After baking it, the flavour was very strong. Maybe more hazelnuts?

Hi Cris! Thank you for the review and comment! The measurements provided are based on the USDA Nutrient Database, but we've gone ahead and triple-checked with the Medjool dates. We measured ~25 grams per date and six medium Medjool dates fit into a 3/4 cup. This aligned with the USDA estimation of 142 grams for a 3/4 cup. Perhaps the Medjool dates you have access to are fairly large? We're glad you enjoyed the recipe regardless ✨🙂
