1medium onion, diced

1medium potato, cut into 1 cm cubes

1 cup (192 g)dry green lentils, preferably soaked overnight†

1 cup (240 mL)water

½ tspground turmeric

½ tspground cinnamon

½ tspsalt, plus more to taste
Directions
- Add the oil and onions to a medium pot on medium-high heat and sauté until the onions are lightly golden, about 3 - 5 minutes.
- Add the remaining ingredients. Partially cover, bring to a boil, and reduce heat to a simmer*. Stir once or twice until the lentils are soft and the potatoes cooked, which takes approximately 20 minutes. If the lentils were not pre-soaked, more water may be needed. Serve, and enjoy!
Notes
- †Soaking isn't necessary but helps to increase nutrient absorption and quickens cooking time.
- * Don't completely cover with a lid entirely as foam may form and overflow.

- Store in an airtight container in the fridge for up to 4 days.

SO delicious, easy and quick! I also ended up spooning aside some of the cooked lentils (once the dish was completely made) and mashed into a paste to use as a spread for wraps and sandwiches.
