Ingredients

  • 1 Tbsp (15 mL)
    vegetable oil
  • 1
    medium onion, diced
  • 1
    medium potato, cut into 1 cm cubes
  • 1 cup (192 g)
    dry green lentils, preferably soaked overnight
  • 1 cup (240 mL)
    water
  • ½ tsp
    ground turmeric
  • ½ tsp
    ground cinnamon
  • ½ tsp
    salt, plus more to taste

Directions

  1. Add the oil and onions to a medium pot on medium-high heat and sauté until the onions are lightly golden, about 3 - 5 minutes.
  2. Add the remaining ingredients. Cook at a gentle simmer, partially covered, for 20 minutes. Stir occasionally.
  3. Serve, and enjoy!

Notes

  • Soaking isn't necessary but helps to increase nutrient absorption and quickens cooking time.

If I use sweet potato (instead of potato), shall I reduce cooking time?

Hi Mary, sweet potato may impact the cooking time slightly but the lentils will still need around 20 minutes. We'd recommend soaking the lentils overnight before cooking and keeping an eye on the pot more closely. Soft lentils and potatoes are a sign it's ready 😊

SO delicious, easy and quick! I also ended up spooning aside some of the cooked lentils (once the dish was completely made) and mashed into a paste to use as a spread for wraps and sandwiches.
