  • 2 tsp (10 mL)
    olive oil
  • 1
    large onion, diced
  • 2
    cloves garlic, crushed
  • 1 tsp (2 g)
    curry powder
  • ½ tsp
  • ½ tsp
    ground turmeric
  • ¼ tsp
    ground allspice (optional)
  • 3
    carrots, chopped
  • 2
    medium potatoes, chopped
  • vegetable bouillon cube
  • 4 cups (960 mL)

Serves well with

  1. Add the oil and onion to a large pot on high heat. Cook until lightly caramelized, about 5 - 7 minutes. Add splashes of water as needed to deglaze the pot.
  2. Add the garlic and all the spices. Cook for another 2 minutes.
  3. Then add the remaining ingredients, except for the quinoa. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the potatoes have softened.
  4. Using an immersion blender, purée the soup to the desired consistency. If using a standing blender, we recommend blending half, so that some small chunks remain.
  5. Serve alongside some cooked quinoa, or with croutons. Enjoy!

I was looking for a way to use up the carrots I had left over and this did not disappoint. It was very yummy and perfect for a cold winter's day.
I added a bit of cream at the end and had some leftover rice with it.
Thanks for sharing! I'll definitely make it again.

What a yummy curry/soup recipe! This definitely hits the spot. I've been enjoying it with fresh cilantro on top and some pita bread on the side.

Can you substitute the curry by curry mango powder (santa maria)?

PUL Team - Dec. 21, 2021, 2:20 a.m.

Hi Wendy! Feel free to use santa maria curry powder if desired. We'd also recommend giving the soup a taste and adding more spices as desired to taste 🙂
