Curried veggie soups are always so flavourful and versatile. If you've got any lentils, zucchini, or bell peppers in the fridge that need to be used up, feel free to add them to the soup as well!
Add the oil and onion to a large pot on high heat. Cook until lightly caramelized, about 5 - 7 minutes. Add splashes of water as needed to deglaze the pot.
Add the garlic and all the spices. Cook for another 2 minutes.
Then add the remaining ingredients, except for the quinoa. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the potatoes have softened.
Using an immersion blender, purée the soup to the desired consistency. If using a standing blender, we recommend blending half, so that some small chunks remain.
Serve alongside some cooked quinoa, or with croutons. Enjoy!

I used coriander instead of garam masala, and sprinkled chopped parsley over the quinoa (as the pictures suggested something like that, and I had parsley that needed eating). I will probably try cilantro with the leftover soup (as I doubled the recipe)!

This was a good solid soup and I love the idea of quinoa as a topping 😊 next time I'll add some more different toppings to make it even more interesting 😋 it's great as a clean out the fridge or staple soup!
I am not really one for soups, but I was so excited to try some of the soup recipes in this app that I bought a standing blender! This is the first recipe I tried and I love it so much! Can't wait to try more!

Solid recipe, but I found it was lacking a little depth and acidity so I added some lemon juice and that seemed to help a lot!
