    olive oil
  • 1
    large onion, diced
  • 2
    cloves garlic, crushed
  • vegetable bouillon cubes
  • 4 cups (960 mL)
  • 3
    medium carrots, finely chopped
  • 2
    medium potatoes, finely chopped
  • 1 tsp (2 g)
    curry powder
  • ½ tsp
  • ½ tsp
    ground turmeric
  • ¼ tsp
    ground allspice (optional)
  • 1 cup (185 g)
    cooked quinoa (optional)

  1. In a large pot on high heat, cook the onion in oil. Add splashes of water to prevent burning. Stir until the onions lightly caramelize, about 8 minutes.
  2. Add the crushed garlic and cook while stirring until lightly golden, about 2 minutes.
  3. Then add the remaining ingredients, except for the quinoa. Bring to a boil, and reduce to a simmer. Cook uncovered until the potatoes are cooked, about 20 minutes.
  4. Using an immersion blender, puree the soup to the desired consistency. If using a standing blender, we recommend blending half, so that some small chunks remain.
  5. Stir in the cooked quinoa, or serve the soup alongside the quinoa. Enjoy!


  • Store in an airtight container in the fridge for up to 4 days, or in the freezer for up to 2 months.

Hi Wendy! Feel free to use santa maria curry powder if desired. We'd also recommend giving the soup a taste and adding more spices as desired to taste 🙂
