Lentils and potatoes are always fantastic together and make this soup pure comfort. Plus it's a pretty low maintenance recipe - any combination of veggies can go into it and it'll turn out great.

Ingredients

Soup

  • 2 tsp (10 mL)
    olive oil
  • 1
    medium onion, diced
  • 2
    cloves garlic, crushed
  • 1 tsp (2 g)
    curry powder
  • 1 tsp (2 g)
    paprika powder
  • ½ tsp
    ground coriander
  • ½ tsp
  • ¼ tsp
    ground turmeric
  • 3
    medium potatoes, cut into 1 cm cubes
  • 1
    zucchini, finely chopped
  • 1
    carrot, finely chopped
  • 1 cup (204 g)
    dry red lentils, soaked in hot water for 10 minutes
  • 2
    vegetable bouillon cubes
  • 4 cups (960 mL)
    water

Serve with

  • ½
    lemon, juiced
  • 1½ cups (360 mL)
    unsweetened soy yogurt

Directions

  1. Add the oil and onion to a large pot on high heat. Cook until golden, about 5 minutes. Add splashes of water as needed to deglaze the pan.
  2. Then add garlic and the spices, and cook for another 2 minutes.
  3. Add the remaining soup ingredients. Simmer, partially covered, for 15 minutes or until the lentils and potatoes are cooked.
  4. Optionally, for a creamier texture, use an immersion blender to purΓ©e some of the soup. Then add the lemon juice.
  5. Garnish as desired, serve hot and enjoy!

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • Store in the freezer for up to 2 months.

Although I loved other similar PUL recipes to this one, this lentil soup didn't quite do it for me... The lentils weren't fully cooked even though I soaked them and let them cook for more than 20 minutes and the final texture of the soup was a bit thicker than expected. Other than that though, the dish was pretty good and I enjoyed it!

This is soooo good! it’s been snowing since 6 AM this morning and it’s almost noon so I made this for lunch because I had all the ingredients. It is so delicious I don’t like to be someone that changes somebody else’s recipe and then says it’s good, but I will admit I put a Serano pepper in there because I really like spicy.I can’t wait to share it with my daughter! When you find a good vegan recipe, you need to tell all your friends!

So easy and beyond delicious. I made a single portion and found that the spices were bland so I doubled up on it and added a dash of coconut milk as well to make it extra thick and creaming. A 40min recipes ended up being 15min and I loved it. Definitely a winner for single quick dinners

Easy to make and very flavorful. My first time using some of these spices (definitely not last!).

I reduced the amount of water and cut the veggies a bit bigger. Worked great as a regular curry with rice.
