Ingredients

  • 1 tsp (5 mL)
    olive oil
  • 1
    medium onion, diced
  • 2
    cloves garlic, crushed
  • 5 cups (1200 mL)
    water
  • 1
    vegetable bouillon cube
  • 3
    medium potatoes, cut into 1 cm cubes
  • 1 tsp (2 g)
  • 1 tsp (2 g)
    curry powder
  • 1 tsp (2 g)
    paprika powder
  • ½ tsp
    ground coriander
  • ½ tsp
    ground turmeric
  • 1 cup (192 g)
    dry red lentils, soaked in warm water for 15 minutes
  • 1
    medium carrot, finely chopped
  • 1
    medium zucchini, finely chopped
  • 2 tsp (10 mL)

Directions

  1. Add the oil to a large pot on high heat. When hot, add the onion and sauté until golden, about 5 minutes. Add splashes of water as needed to deglaze the pan.
  2. Then add garlic and cook for another 2 minutes.
  3. Add the water, bouillon cube, potatoes, and spices, and stir.
  4. Bring to boil, reduce to a simmer, and partially cover. Cook for 5 minutes.
  5. Add the drained lentils, carrots, zucchini, and soy sauce. Bring back to a boil, partially cover, then reduce to a simmer for 10 minutes.
  6. When the lentils and potatoes are fully cooked, serve while hot. Optionally, for a creamier texture, you can use an immersion blender to purée some of the soup. Enjoy!

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • Store in the freezer for up to 2 months.

Hi :) This recipe sounds amazing. I was just wondering if I could make it in a slow cooker? I have some errands to run and it would save me a lot of time, if I could just put all the ingredients in the slow cooker and leave it there. Would that effect the taste immensely?
