Ingredients

  • 1 cup (192 g)
  • 1 tsp (5 mL)
    olive oil
  • 1
    yellow onion, diced
  • 2
    cloves garlic, crushed
  • 5 cups (1200 mL)
    water
  • 1
    vegetable bouillon cube
  • 3
    potatoes, cut into 1 cm cubes
  • 1 tsp (2 g)
  • 1 tsp (2 g)
    curry powder
  • 1 tsp (2 g)
    paprika powder
  • ½ tsp
    ground coriander
  • ½ tsp
    ground turmeric

Optional garnish

  • fresh cilantro
  • sambal oelek

Directions

Click:

  1. Soak the lentils in warm water while preparing the veggies.
  2. Add the oil to a large pot on high heat. When hot, add the onion and sauté until golden, about 5 minutes, stirring on occasion. Add splashes of water as needed to deglaze the pan.
  3. Then add garlic and sauté for another 2 minutes, stirring on occasion.
  4. Add the water, bouillon cube, potatoes, and spices, and stir.
  5. Partially cover with a lid, bring to boil, reduce to a simmer, cooking for 5 minutes.
  6. Add the drained lentils, carrots, zucchini, and soy sauce. Bring to boil, then reduce to a simmer with the lid partially covered for 10 minutes.
  7. When the lentils and potatoes are fully cooked through, serve while hot, and enjoy!

Notes

  • Texture: for a creamier texture, you can use an immersion blender to purree some of the soup until it reaches the texture you like.

Storage

  • Store in an airtight container in the fridge for up to 4 days, or in the freezer for up to 1 month.

I've made this recipe plenty of times, my ultimate fave! The ingredients list doesn't show the amount for soy sauce :)
