1medium onion, diced

2cloves garlic, crushed

1 tsp (2 g)curry powder

1 tsp (2 g)paprika powder

½ tspground coriander

3medium potatoes, cut into 1 cm cubes

1zucchini, finely chopped

1carrot, finely chopped

2vegetable bouillon cubes

4 cups (960 mL)water
Serve with

½lemon, juiced

1½ cups (360 mL)unsweetened soy yogurt

Directions
- Add the oil and onion to a large pot on high heat. Cook until golden, about 5 minutes. Add splashes of water as needed to deglaze the pan.
- Then add garlic and the spices, and cook for another 2 minutes.
- Add the remaining soup ingredients. Simmer, partially covered, for 15 minutes or until the lentils and potatoes are cooked.
- Optionally, for a creamier texture, use an immersion blender to purée some of the soup. Then add the lemon juice.
- Garnish as desired, serve hot and enjoy!
Storage
- Store in an airtight container in the fridge for up to 4 days.
- Store in the freezer for up to 2 months.

Delish! Didn't have Zucchini, so doubled up on the carrots. Going in my recipe box!
Sooo delicious. Next time I make it I’ll cook it slower but for longer to get those beautiful flavours mixed! And maybe add ginger with the garlic!
