This dish was inspired by the Indian flavours and spices. We took some liberty and adapted a dish called Rajma, which is made with kidney beans and swapped those for white beans. We mixed the soy milk with some chickpea flour to make the dish very creamy and added some yogurt for the tanginess. This dish is pure comfort and rich in protein.

This was excellent! The flavor from the fennel seeds was soooo good, and I loved the crunch of the pepitas. I can’t wait to eat the leftovers tomorrow!
I had to make a few substitutions for ingredients I didn’t have on hand- Cashew cream with lemon juice for the yogurt, and cashew cream plus water for the milk. We paired the beans with fresh sourdough.

Such a satisfying meal! It's so creamy without being too rich and perfect to shovel in with a naan 😁 I made a half serving (so two portions) and found it only needed 5 minutes to cook to thicken up. I'm definitely adding this one to my regular rotation!

Thanks for sharing your experience with the stew, Willemieke! Indeed soy milk tends to be more creamy than almond. In case you find it too thin again, you could let the dish simmer for longer to thicken 🤗

Really unique and tasty. The dominant flavors are tomato and ginger, which at least for us isn't a common set of dominants flavors in a bean dish. We will definitely be making this again.

I agree I also found it a little bit bland, next time I’ll double de spices. I meal prepped this dish for breakfast through out the week and it keeps perfectly in the fridge for about 4 days. Just needs a touch of fresh lime and it comes back to life!
