I don't put stars yet as I had no chickpea flour, so I replaced it with 2/3 regular flour and 1/3 corn flour, and the texture of the keftas was not right, which might be because of that. Otherwise, the flavor of them was good! For the rice, I find that the sauce was too liquid for me, I've made a bit more rice and it was still not it, next time I'll try half the water (or maybe even no water at all, and I'll add extra when combining with the rice if necessary). Overall it was a filling dish, but I'll have to try it again with some adjustments to see if it's worth doing it regularly for me.

Hii Nohya, thanks so much for sharing your experience! We haven’t tried this recipe with flours other than chickpea flour, so it’s likely that the change affected the results. Chickpea flour really helps the koftas stick together, so using regular flour and corn flour can change the texture.
For the rice, reducing the water is a lovely idea. Perhaps you could start with half the water and add more as needed when mixing it with the sauce. This usually helps get a better texture without the rice becoming too soft. It’s great to hear that the flavours worked well and that the dish was still filling! Happy cooking and experimenting ☺️

This took 2h, not 1 even with the help of my mom😅 the rice seemed a bit plain even with the bullion cube and miso paste, the veggie patties almost had too many spices but I guess it balances out with the rice

I did find the koftas soaked up a lot of oil - is there a way to reduce this?

So glad you enjoyed it, Louise! The koftas can soak up a bit of oil since chickpea flour tends to do that. We haven't tested it ourselves so we can't say with absolute confidence how they'll turn out, but next time you can try lightly brushing or spraying them with oil and baking or air-frying instead of pan-frying. It should hopefully give a similar golden exterior with less oil absorption - let us know how it goes if you try it out! ☺️

You can boil it in a pot of water for about 10 to 12 minutes until tender, or roast it for extra flavour by tossing the cubes in a little oil and baking at 400°F (200°C) for around 20 to 25 minutes. As long as the squash is nice and soft, it’ll blend well into the sauce💛

I personally steamed mine in the microwave! Put it in a microwave safe bowl, added a couple tablespoons of water, covered, and microwaved for 5 minutes.
