Wow! The gremolata takes the soup to another delicious dimension! Used the leftover gremolata the next morning on a tofu scramble. 😋
For the soup, instead of bouillon cubes I used homemade veggie broth and simply adjusted for salt.

What a wonderful soup! This is the first time I've heard of gremolata, and it tastes so good! The soup itself is delicious, but with the toppings it's like a whole different dish – in a very good way.
I had some boiled potatoes left over and added them to the soup.
