  • 1¼ cups (250 g)
    uncooked white rice, rinsed
  • 2 tsp (10 mL)
    vegetable oil
  • 1
    medium onion, chopped
  • 3
    cloves garlic, minced
  • 1
    fresh jalapeño, minced
  • 1 tsp (2 g)
    freshly grated ginger
  • 3½ cups (245 g)
    button mushrooms, chopped
  • 1 Tbsp (5 g)
  • 2 tsp (6 g)
    ground cumin
  • 2 tsp (4 g)
    ground coriander
  • ½ tsp
  • 1⅔ cups (399 mL)
    canned crushed tomatoes
  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • 1⅓ cups (236 g)
    cooked red kidney beans
  • 2 cups (60 g)
    fresh spinach
  • ½
    lime, juiced

Optional garnishes

  • fresh cilantro
  • fresh jalapeño
  • lime slices

  1. Cook the rice according to the package instructions.
  2. In a large pot over medium-high heat, heat the oil and add the onion. Sauté for 3 - 4 minutes, adding splashes of water if needed to deglaze the pan.
  3. Meanwhile, prepare the garlic, jalapeño, and ginger. Then add these to the pot to cook for 2 minutes. Stir often.
  4. Next add in the mushrooms, garam masala, cumin, coriander, and salt and cook for 4 - 5 minutes, or until the mushrooms have released their moisture and are soft. Add a splash of water if needed to prevent the spices from burning.
  5. Add the tomatoes, coconut milk, and kidney beans. Stir and bring to a gentle boil. Cook for 5 minutes, stirring often. Then add in the spinach and stir until wilted.
  6. Before serving, squeeze in the lime juice. Serve with rice or naan, fresh cilantro leaves and extra lime wedges if desired. Enjoy!

I very rarely follow recipes to the letter but I was intrigued by the beans, mushrooms, spinach and nothing else in this curry (I usually add tons of different things) and it was brilliant! A mix I would have never tried without you and it was well worth it! :)

Saw the YouTube video and this looks delicious! I don't like beans though, how would you replace this with tofu (or something else)? Hey Jess, you could add cooked lentils or chickpeas instead of beans in step five. We haven't tested it out with tofu, but imagine that would work nicely if desired! It may be easiest to prepare the tofu separately first, such as in this minimalist baker recipe:… 😃

This was absolutely delicious! Kidney beans are not my favourite but I had a can lurking in the pantry. This was quick and I had everything on hand. I found the spice mild, but lovely and I think it packs a good nutritional punch.

I did cook it down a bit more than recipe stated before adding spinach - I wanted it a bit thicker. Probably 15 minutes additional simmer time? I also used the entire can of beans - more than recipe called for as its what I had on hand. Wondering if I should have cooked my mushrooms down a bit more? Either way, turned out really tasty.

Will definitely make this again, thanks for the recipe!

First of all, I love your channel. Second, this food was delicious and felt rich in nutrition with all the different ingredients. But it seemed a bit too watery to me and was less flavourish than I expected. I plan to try it next time in a pan and to make it more creamy.

Hey Farnaz, I experienced the same problem with the sauce being "too watery", as the coconut milk I used was not really thick. And the first time I tried the recipe I didn't use the good tomato sauce ; as I'm french I misinterpreted "canned crushed tomatoes". :P
So I've learn it's important to have the right ingredients. But what I did is to let it cook a bit longer with no covering, and add approx. 2 tablespoon of cornflour. Then it will be fine :)
As for the flavour, I find it really tasty !

I tried it, and I LOVED IT, it was absolutely delicious. It's directly going into my small list of vegan meals I'm trying to build up little by little. It took me almost 45 minutes to cook though, but I know I can improve that by just doing it again 2 or 3 times. If only I had someone just telling me what I have to do next :D

Hey Tatjana! You could use another liquid, such as an alternative unsweetened plant milk or water. If the curry is a little thinner then preferred the addition of pulverized cashews could help add some creamy thickness. The curry won't have the same coconut taste but you can also adjust the spices to taste and we think it would be delicious 😊

This was delicious!

I did switch a few things, though. Instead of using button mushrooms, I used shiitake, maitake, and another Japanese mushroom. Then I omitted the jalapeño due to a sensitivity to spicy food. Lastly, I added a bunch more garlic since I love garlic.

This is definitely a make again dish.

This recipe is so easy and flavorful! I love that in uses plenty of pantry staples (at least in our house), so the only "special" thing I needed to pick up at the store was Jalapeno. My dish didn't have as much heat as I would've liked (I think the pepper I bought wasn't as spicy as usual), so I added some Yuzu Hot Sauce to my bowl and it added just the right amount of acidity and heat that my husband and I love! He has requested this to be added to our dinner rotation, and with how simple it is to make, I'm happy to oblige!

I am not sure if I am missing anything but it feels like a lot less. It is still super tasty, but I might need to adjust next time and serve double servings.

Hey Maria! You can omit the jalapeño, or substitute it with another pepper or vegetable for a less spicy curry. If some spice is still desired though, crushed red pepper, cayenne, or serrano pepper can do the trick 😊

Not only is this delicious, it’s also very filling. I love that it’s a vegan recipe that is easy on the budget, easy to make, easy to take on the go for lunches and that it’s also safe around my student with a severe tree nut allergy.

Process: this was very simple to make. I would guess it could totally be made writing 20-30 minutes for a novice cook.

Delicious like all your other curries and very easy to make. Unfortunately the neighborhood store didn’t have any mushrooms, so I replaced them with some tempeh cubes that i had. Can’t wait to try it with the mushrooms 😊

Thank you so much for this recipe and a lot of your other ones. I had Covid about a year ago and it flipped my taste (parosmia). There are plenty of things I can no longer eat (due to them tasting rotten or worse).
Finding your blog and your recipes helped me a lot to get back on track with giving my body the things I was craving (and my body needed). I know you don't want to concentrate on nutritional values, but cooking your recipes has me feeling stronger and more awake. As a former flexiterian, I was struggling to adjust to a lifestyle entirely without certain food groups (such as meat, but sadly also a lot of fruit and vegetables).
Your recipes, like this incredible curry, make me feel like I have the changes in my diet under control. And, most importantly, they tast delicious!

Absolutely in love with this recipe. Made this for dinner of two and I am so happy I meal prepped so I can still eat it throughout my week. I added a splash of maple syrup for a bit more sweetness which I highly recommend.

We tried this tonight and it was delicious. We took the seeds out of the jalapeño because I was planning on us eating from the same pan. In the end it was easy to cook some on the side at that point for our 10-month-old to eat it with us. She loved it too! Please consider doing a baby-friendly video so that I can expand the no-salt recipes that I’m already making.

I made this for my parents (who have to eat meat with every meal otherwise it feels incomplete for them) and they LOVED IT!! I made quite a few substitutions since they didn’t have all ingredients at their house but it was still lovely. I swapped out the garam masala for LOTS of black pepper and more cumin, used lots of powdered ginger, omitted the jalapeño, and swapped out the coconut cream for full-fat dairy whipping cream. In my opinion, the lime is what makes this dish even more delicious and unique, so make sure you try it if you have it. 10/10 recipe!

This looks amazing! By any chance, can you come up with a substitute for the tomatoes? I cannot have nightshades, it’s easy to leave out spices, like the jalapeño, but it’s hard to figure out what to replace the tomatoes with. Thank you for your lovely recipes! Would love nightshade free recipes!

Hi there, Aimee! You could opt to exclude them or use an alternative crushed vegetable such as carrot or sweet potato if desired. For a liquidy substitute, coconut milk or water may work as well. We'd recommend tasting the curry and adjusting the spices or adding lemon juice to taste in any case.

Hey Moni das! You can opt to include the mushrooms and beans or exclude them if desired. You may find that including either one is nice for a bit of texture with the sprouts. If opting for just mushrooms and bean sprouts, for example, 3 cups of mushrooms with 1 and 1/2 cups of sprouts is one idea 😊

I was wondering, if I wanted to swap out the mushrooms for something else (I so wish I liked mushrooms but I can only enjoy them in small amounts!) what would you recommend to go with the flavours of this curry?
