Thai Sweet Potato & Chickpea Green Curry

This is a mash-up of all the things that make a great curry. It's creamy, protein-rich, and loaded with delicious veggies. The curry paste makes it a touch spicy, and this whole dinner comes together with under 10 ingredients.

Ingredients

  • 1 cup (200 g)
    uncooked white rice, rinsed
  • 1 tsp (5 mL)
    vegetable oil
  • 1
    medium onion, diced
  • 2
    cloves garlic, crushed
  • 2 Tbsp (50 g)
  • 1
    medium sweet potato, cut into 1 cm cubes
  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • 1¼ cups (205 g)
    cooked chickpeas
  • ½ cup (120 mL)
    water
  • 2 cups (60 g)
    fresh spinach

Directions

  1. Cook the rice according to the package instructions.
  2. To a large pot on high heat, add the oil and onions, and cook until the onions are soft, about 3 minutes. Add splashes of water as needed to deglaze the pot.
  3. Add the garlic and sauté until fragrant, about 1 minute.
  4. Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
  5. Then add the sweet potato, coconut milk, chickpeas, and water*.
  6. Bring to a boil, then reduce to a simmer for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked through.
  7. Remove from heat and add the spinach, stirring to wilt.
  8. Serve over rice or with naan, and enjoy!

Notes

  • Taste test after adding the water. Depending on how thick you like your curry, you may want to add more water to thin it out.

I love this dish. I will say that I get a bit tired of the spinach in it but that is because I eat a lot of spinach. Is there something that I could use to substitute the spinach with?

Hey! I love this website. It is so easy to find recipes and the filters are very helpful. I don’t know any other website that makes healthy cooking so easy. My question: I like to meal prep. Can I also freeze this curry or do you not recommend it?

Hey Johanna! Aw we're so happy the website is being enjoyed. In our experience, defrosted potatoes don't keep their form so well and are a bit gritty, so we haven't tried freezing this one yet. You could still freeze it and the taste should remain good though 😊 Let us know how it goes if you give it a try!

I thought I had nothing in my house to make a great meal. Then I used the recipe filter for sweet potato and coconut milk, then voila! This curry was delicious with just a few pantry items and some frozen spinach I had. I used store bought curry paste and recommend to others to amp it up with some grated ginger and lime garnish if you have it.

Superb!!! As a college student, this meal is totally doable on a weeknight. Easy to access ingredients, short cooking time, and really wholesome! I couldn't find any spinach when I went to the store so I used rainbow chard and it is awesome - I also threw a little carrot in the mix and it is a tasty addition!
