½ Tbsp (7 mL)vegetable oil
1medium onion, diced
2cloves garlic, crushed
2 Tbsp (50 g)
1medium sweet potato, cut into 1 cm cubes
1⅔ cups (399 mL)canned full-fat coconut milk
1¼ cups (205 g)cooked chickpeas
⅓ cup (80 mL)water
2 cups (60 g)fresh spinach
Make your own
- Cook the rice according to the package instructions.
- Add the oil and onion to a large pot on high heat. Cook for 3 minutes.
- Add the garlic and sauté until fragrant, about 1 minute.
- Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
- Then add the sweet potato, coconut milk, chickpeas, and water*.
- Bring to a boil, then reduce to a simmer. Cook for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked.

I could eat this everyday. Even though I was too lazy to go to the store to buy coconut milk, using almond milk instead, this turned out insanely delicious. I also added some pumpkin, because I had to use it, and it was so delicious, that I skipped dinner that day. Splash of lime on top adds a nice touch.
Just so delicious. Thanks you x
I made this curry for my lunch today and it is AMAZING! I love it with a squeeze of lime on top. Pure deliciousness!
Very easy to make! I enjoyed it very much! Will cook it again
Literally my new favourite recipe 😭❤️❤️❤️❤️❤️❤️ Thank you thank you thank you!
One of my favorite curries! Really tasty and hearty.
Added broccoli and more greens, and some lemon juice and roasted cashew nuts to serve. Really good recipe and the website is so convenient to use! Can't wait for the app ❤️
Such a tasty recipe! Thank you! Had so many compliments about this curry! 🙏 I do mine with chickpea and aubergine (eggplant) and do sweet potato wedges on the side instead of rice ✨❤️ Sending loads of love to you all at PUL. Love your all your work! ❤️
I love this dish. I will say that I get a bit tired of the spinach in it but that is because I eat a lot of spinach. Is there something that I could use to substitute the spinach with?
I have made this curry many times and it always hits the spot. Easy to do and delicious. Congratulations on your marriage by the way. I love watching you on you tube.
Love this recipe! I make it all the time!
This is an absolutely delicious recipe! It was really simple to make and my family really enjoyed it as well. Pick Up Limes is such a great place to find healthy and tasty recipes. This website is so uniquely useful and is unmatched by any other company. I recommend it to all my friends and family and they also love all the recipes too!
This was one of the first recipes I made after buying Sadia's cookbook. It's so quick, easy, and delicious!
Hey! I love this website. It is so easy to find recipes and the filters are very helpful. I don’t know any other website that makes healthy cooking so easy. My question: I like to meal prep. Can I also freeze this curry or do you not recommend it?
I had it for dinner tonight. It tastes great.
I have made this several times and love it! It is not too spicy or too sweet. It is also very quick and simple! I am a little obsessed with it.
I thought I had nothing in my house to make a great meal. Then I used the recipe filter for sweet potato and coconut milk, then voila! This curry was delicious with just a few pantry items and some frozen spinach I had. I used store bought curry paste and recommend to others to amp it up with some grated ginger and lime garnish if you have it.
I like it. Oddly sweet. I had my green curry for a while. Never knew how to use it. I will make thisvon a regular basis now.
if I consume this meal in diet time is it ok?
I love your food dear
the recipe is lovely and very easy to follow
but i missed some seasoning-advice
still very delicious :)
I’ve made this curry several times and it never disappoints. Delicious and so easy.
One of the most delicious hearty meals EVER
I've made this dozens of times, and it never disappoints. Easy to prepare, creamy, delicious, a little spicy, and perfect with some naan! Even my spinach-hating husband loves this one.
Hello, can we use Thai Red curry paste instead of the green one?
thank you :)
I have try several of your recipes and they are ALL GOOD, and my husband who never want to eat something without meat is enjoying all of these recipes.
Super excited to try these recipes.
Uncomplicated and quick. Doesn't break the bank and tastes good too :)
Thank you! Great recipe and super easy!
Love it! PUL made my life in the NL so much more delicious and my cooking skills skyrocketed during the stay at home covid times. Delicious recipe, my first from PUL actually, almost 3 years ago... wow, how time flyes!
Easy to make and so delicious! We enjoyed it yesterday on our balcony , it was a perfect summer evening :-)
Best Curry ever! Tried it once and it instantly became my go-to curry recipe 😍🤩
This meal is so quick and few ingredients for students like me with a time crunch!! Its absolutely perfect. Thank you:)
This recipe is perfect for when the weather is cold or raining. I am a fan of sweet potatoes and I’m always looking for ways to cook them differently. Great one pot meal for the family!
one of my favorite curries, so delicious and comforting
This was on repeat during the pandemic lockdown. It's so comforting and good.
Superb!!! As a college student, this meal is totally doable on a weeknight. Easy to access ingredients, short cooking time, and really wholesome! I couldn't find any spinach when I went to the store so I used rainbow chard and it is awesome - I also threw a little carrot in the mix and it is a tasty addition! Thank you for putting together this lovely recipe!
Super simple and so delicious. This dish is a regular in our house!
Perfect quick dish to make on a busy day, most ingredients are available in the kitchen and the leftovers are delicious too!
This was such a perfect weeknight meal!! My husband absolutely loved it as well! Thank you!
I made this for my (meat-eating) friends once and they loved it so much they kept asking for it, so it became a regular hangout meal. It's so good and comforting, but also healthy and made mostly of fresh ingredients. Also, I love the new website! I really appreciate the filter for allergens, too.
made this once and it has immediately become our go-to comfort food. it's quick to cook and soooo delicious we can't get enough of it.
