  1. To a large pot on high heat, add the oil and onions, and cook until the onions are soft, about 3 minutes. Add splashes of water as needed to deglaze the pot.
  2. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
  4. Then add the sweet potato, coconut milk, chickpeas, and water*.
  5. Bring to a boil, then reduce to a simmer for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked through.
  6. Remove from heat and add the spinach, stirring to wilt.
  7. Serve over rice or with naan, and enjoy!

  • * Taste test after adding the water. Depending on how thick you like your curry, you may want to add more water to thin it out.

Thanks for taking the time to share the honest review, Kathie, it's so appreciated to help us improve! Part of the aim of the curry paste was to simplify the ingredients list, although we will be sure to consider the feedback moving forward. In the meantime, if you haven't already seen and are interested, the curry paste recipe contains a more in-depth list of spices and flavour agents here:… 😊

Marjoo - Oct. 4, 2021, 5:35 p.m.

Hello, can we use Thai Red curry paste instead of the green one?

thank you :)

I have try several of your recipes and they are ALL GOOD, and my husband who never want to eat something without meat is enjoying all of these recipes.

PUL Team - Oct. 4, 2021, 6:08 p.m.

Hey there, Marjoo! Feel free to use red curry paste if desired. It does tend to be a bit spicier than green in our experience, so perhaps starting with 1 tbsp and adding more to taste would be one idea 😊 we hope you enjoy the curry!

Superb!!! As a college student, this meal is totally doable on a weeknight. Easy to access ingredients, short cooking time, and really wholesome! I couldn't find any spinach when I went to the store so I used rainbow chard and it is awesome - I also threw a little carrot in the mix and it is a tasty addition! Thank you for putting together this lovely recipe!

PUL Team - May 22, 2021, 9:01 p.m.
