1medium sweet potato, cut into 1 cm cubes

1⅔ cups (399 mL)canned full-fat coconut milk

1¼ cups (205 g)cooked chickpeas

½ cup (120 mL)water†

2 cups (60 g)fresh spinach

Directions
- To a large pot on high heat, add the oil and onions, and cook until the onions are soft, about 3 minutes. Add splashes of water as needed to deglaze the pot.
- Add the garlic and sauté until fragrant, about 1 minute.
- Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
- Then add the sweet potato, coconut milk, chickpeas, and water*.
- Bring to a boil, then reduce to a simmer for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked through.
- Remove from heat and add the spinach, stirring to wilt.
- Serve over rice or with naan, and enjoy!
Notes

I thought I had nothing in my house to make a great meal. Then I used the recipe filter for sweet potato and coconut milk, then voila! This curry was delicious with just a few pantry items and some frozen spinach I had. I used store bought curry paste and recommend to others to amp it up with some grated ginger and lime garnish if you have it.

Superb!!! As a college student, this meal is totally doable on a weeknight. Easy to access ingredients, short cooking time, and really wholesome! I couldn't find any spinach when I went to the store so I used rainbow chard and it is awesome - I also threw a little carrot in the mix and it is a tasty addition!
