Thai Sweet Potato & Chickpea Green Curry

This is a mash-up of all the things that make a great curry. It's creamy, protein-rich, and loaded with delicious veggies. The curry paste makes it a touch spicy, and this whole dinner comes together with under 10 ingredients.

Ingredients

  • 1 tsp (5 mL)
    vegetable oil
  • 1
    onion, diced
  • 2
    cloves garlic, crushed
  • 1
    sweet potato, cut into 1 cm cubes
  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • 1¼ cups (231 g)
    cooked chickpeas
  • ½ cup (120 mL)
    water*
  • 2 cups (60 g)
    fresh spinach

Directions

Click:

  1. To a large pot on high heat, add the oil and onions, and cook until the onions are soft, about 3 minutes. Add splashes of water as needed to deglaze the pot.
  2. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
  4. Then add the sweet potato, coconut milk, chickpeas, and water*.
  5. Bring to a boil, then reduce to a simmer for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked through.
  6. Remove from heat and add the spinach, stirring to wilt.
  7. Serve over rice or with naan, and enjoy!

Notes

  • * Taste test after adding the water. Depending on how thick you like your curry, you may want to add more water to thin it out.

I made this for my (meat-eating) friends once and they loved it so much they kept asking for it, so it became a regular hangout meal. It's so good and comforting, but also healthy and made mostly of fresh ingredients. Also, I love the new website! I really appreciate the filter for allergens, too.
