These colourful wraps are packed with the perfect balance of textures and flavours: the tofu gets grated, providing a unique bite. Then, it gets cooked with smoked paprika and BBQ sauce, making it the perfect addition to the crisp cabbage and sweet corn. Make sure not to skip the chipotle mayo, it takes these wraps to the next level!
Heat the oil in a sauté pan over medium-high heat and add the tofu, garlic, and smoked paprika. Cook for 4 - 5 minutes.
Then add the BBQ sauce. Cook for another 1 - 2 minutes and take it off the heat.
Assemble the wraps with cooked rice in the middle, then topping it with the tofu, spinach, cabbage, corn, and green onion.
Wrap it up and toast it in a grill pan if desired.
Mix the sauce in a small bowl and serve it along with the wraps. Enjoy!

So good! I tried it this week for the first time, made a bowl instead of the wrap because I couldn't fold it properly (I used lebanese flatbread) and it was really tasty. I have to admit that I put a bit more of the bbq sauce and smoked paprika just for my taste but I enjoyed it a lot (and my colleagues were a litte bit jaleous of m'y plate 😉). It surely will be on a rotation here, thank you!

Hey Sammy, we don't imagine it would freeze well. Mostly because tofu can hold on to ice crystals with its porous structure, so when it thaws, it might become soggy. If you don't mind that, you can certainly still give it a try though, and if you do try it, let us know how it goes 😊

Sooo yummy! I made this as a super-quick lunch at my lunchbreak when working from home. To speed things up a little, I pressed the tofu for several hours to get rid of the moisture and then I skipped the frying. I didn't have red cabbage at home, so I used shredded carrot instead and it worked perfectly. 😊

Optional substitute: Mayo, Chipotle seasoning, fresh minced garlic, lemon juice. I prefer this mixture so I don’t have to open a can of chipotle peppers in adobo sauce and wonder what to do with the rest of it now that the can is open.
