16 oz (450 g)firm tofu, pressed

1 Tbsp (15 mL)vegetable oil

4cloves garlic, crushed

⅓ cup (67 g)uncooked white rice

1stalk green onion, sliced (optional)

1½ cups (105 g)shredded red cabbage

4large soft tortillas

½ cup (82 g)canned corn
-
1½ cups (45 g)fresh spinach, chopped

⅓ cup (80 mL)barbecue sauce
Chipotle mayo
Directions
- Cook the rice according to the package instructions. When done, fluff and set it aside.
- Next, grate the tofu into large shreds.
- Heat the oil in a sauté pan over medium-high heat and add the tofu, garlic, and smoked paprika. Cook for 4 - 5 minutes.
- Then add the BBQ sauce. Cook for another 1 - 2 minutes and take it off the heat.
- Assemble the wraps with cooked rice in the middle, then topping it with the tofu, spinach, cabbage, corn, and green onion.
- Wrap it up and toast it in a grill pan if desired.
- Mix the sauce in a small bowl and serve it along with the wraps. Enjoy!

This one was full of flavor with the perfect amount of crunch from the spinach and cabbage.

Sooo yummy! I made this as a super-quick lunch at my lunchbreak when working from home. To speed things up a little, I pressed the tofu for several hours to get rid of the moisture and then I skipped the frying. I didn't have red cabbage at home, so I used shredded carrot instead and it worked perfectly. 😊
I also added jalapeno slices, it was SO good!
Even worth a try if you can't get your hands on the chipotle sauce (I couldn't). It's such a delicious way to sneak more raw veggies into your daily intake. :)

Easy and delicious! I was lazy to make the rice and swapped it for avocado like you suggested and it was perfection!
We just did it, it was super great! I didn't add the rice because I ate a lot of carbs on my daily basics. But I can fill that this will add more confortness to the dish
