The texture of this spiced tofu is so like paneer, that it boggles my mind every time we make this curry. The vibrant green hue is from loads of spinach we added to the dish, and we didn't hold back on the spice in this recipe, so some warm rice and/or fluffy naan is a definite must.

  • 1 cup (200 g)
    uncooked basmati rice


  • ¾ cup (98 g)
    raw cashews
  • 1 Tbsp (15 mL)
    vegetable oil, for frying
  • 1
    medium onion, finely chopped
  • 5
    cloves garlic, minced
  • 1
    jalapeño, minced
  • 1 Tbsp (6 g)
    whole cumin seeds
  • 1 tsp (2 g)
    chili flakes, or less if you prefer less spicy
  • 1 Tbsp (6 g)
    ground coriander
  • 1 Tbsp (5 g)
  • ½ tsp
    cayenne pepper
  • ½ tsp
  • 1¾ cups (420 mL)
    canned full-fat coconut milk
  • 4½ cups (135 g)
    fresh spinach
  • ½
    lemon, juiced

Seasoned tofu

  • 16 oz (450 g)
    firm tofu, pressed, cut into 1 cm cubes
  • 1 Tbsp (6 g)
    curry powder
  • 1 Tbsp (15 mL)
    vegetable oil, for frying


  1. Cook the rice according to the package directions.
  2. Add the cashews to a bowl and cover with boiling water. Set aside.
  3. Add the tofu cubes, curry powder, and nutritional yeast to a large bowl. Toss to coat.
  4. Add oil to a large pan over medium-high heat. When hot, add the seasoned tofu and cook until golden on all sides. Stir periodically, but avoid over-stirring as this can break up the tofu.
  5. Meanwhile, add some more oil to a large pot on medium-high heat. When hot, add the onion and garlic. Cook until lightly golden.
  6. Then add the jalapeño, cumin seeds, and chili flakes. Cook for 2 minutes.
  7. Drop the heat to medium-low and add the remaining ground spices. Toast for 30 - 60 seconds, stirring throughout.
  8. Then add the drained cashews, coconut milk, and spinach. Cook until the spinach is wilted. Remove from the heat and let cool slightly.
  9. Transfer the spinach mixture to a blender. Blend until smooth, then return the mixture to the pot.
  10. Add some lemon juice, and the cooked tofu. Stir, and cook until everything is heated through.
  11. Serve with the rice or naan and garnish as desired. Enjoy!

Hi Sadia and PUL-team!
This looks so delicious and I would love to give it a try. For health reasons I have to follow a diet very low in saturated fats (OMS-diet), and coconut is a no-go: is there a non-coconut replacement you could suggest? Would cashew- or almondmilk work? Thank you in advance!

This is such a tasty meal (and a dish that I’ve missed since becoming vegan) 😍 Easy to make and surprisingly filling too. Personally prefer light coconut milk over the full fat one for this recipe (have tried it both ways). This is definitely a keeper!

They say never to try a new recipe when you’re having guests over but PUL never disappoints, so I took the risk and made this for some non plant based foodie friends who came over for dinner for the first time. They absolutely loved it! I’ve made tofu palak paneer before but this recipe has definitely replaced the old one in my books. I used an immersion blender because I don’t have a stand blender and it worked perfectly (plus fewer dishes).

Amazing recipe and a really good way to include spinach and tofu in a dish. I don't really like tofu, but done like this, it was great. I did have to make some adjustments so I can't say 100% how the recipe here is, but I believe it would be just as good. I used frozen spinach cause that was all I had, added coriander as well because I love it, and I didn't have jalapeno, so I used a small package of thai green curry paste, but I believe that enhanced the flavour a lot. All in all, another great dish!

I loved this! Packed with flavour and just allround delicious. Would definitely make this again. The only thing I would say is that the amount of portions didn’t quite work out for me. I would say I got around 2-3 portions out of it (rather than 4 which the recipe stated). I added some more coconut milk and some water to thin it out slightly so it would serve 3-4 :)

Turned out so good!! For easy cleanup, I did the tofu in the oven at 400 on parchment paper for 30 mins. I substituted white rice with brown rice. I happen to have a chili pepper in the frig — de-seeding provided a good heat.

Hey Jess82, the cashews help to make the Palak Tofu a little bit thicker. You could leave the cashews out entirely for a less creamy curry. Alternatively, you could use equal parts plant-based creamer, like soy creamer or oat creamer. We hope this helps for now ☺️

I'd been itching to make this ever since I saw the recipe on YouTube, but my blender was packed away to move house. Finally got it unpacked and set up and made this delicious meal for dinner after a long day. Definitely one that needs two pans going so the tofu can get nice and crispy while you make the sauce. It's another simple recipe but full of flavour and a great recipe to get some leafy greens in your day!

This looks gourmet and is absolutely incredible. Paired it with the garlic naan from the app and OMG. Perfect family meal! I had a good portion of sauce left so I froze it so we can have this again next week!

Wow! We had it last night and it was fantastic.
I faintly remember having this or something similar a few years ago at my parents in law and was obsessed with the taste.
So glad I finally got to eat it again.
The curry taste wasn't overwhelming, my two year old even ate it.

Delicious! I added some chickpeas, which was a nice addition.

Delicious. Some kasuri methi will make it restaurant-like.
Easy and quick. I used an immersion blender to blend and air fryer for the tofu. Turned out great!

Do you have any substitute for coconut milk?
I do not usually like the taste of coconut and I see it being used in a lot of recipes.

Hey Shuchita, light coconut milk is more watered down so it's one alternative that offers a more subtle coconut flavour. We haven't tested these out, but possible substitutes could also be soy creamer, oat milk, or cashew cream (soaked cashews pulverized). You could also use a general unsweetened plant-milk for a less creamy curry. We hope you enjoy the Palak Tofu if you're able to give it a try 🤗
