High-Protein Indian Style Kitchari

There are many versions of the kitchari recipes, but the traditional Indian Ayurvedic recipes don't use aromatics like onions and garlic. Usually, you will find recipes that use equal amounts of rice and mung beans, but for our high-protein version, we decided to use more mung beans. The result is this rich, comforting and cozy dish. We sneaked in some veggies to make the dish more nourishing and complete.

What veg can I use instead of cauliflower?

Heyy Janelle! Mmm yes, you could totally swap the cauliflower for other veggies if you'd like 😊 Some ideas that would keep the flavour closest to the original are broccoli, zucchini, green beans, or more peas. You could also stir in leafy greens like spinach closer to the end of cooking. Sweet potato is another idea, although it would make the dish a bit sweeter. Let us know if you enjoy any swaps ☺️

This would be good if I was feeling sick in the winter and wanted something warming. Mild flavors, but good and filling.

I have tips!:
We had everything but the mung beans on hand so subbed in red lentils and it worked beautifully.
Also, since commenters had said it could be bland I added veg stock instead of water and it became so delicious it needed nothing, although the lemon and chili flakes elevated it all the more.
We had it with naan and mango chutney on the side.
The kids came in asking “what’s that smell?”, which I worried was a negative but they thought it smelled amazing, and they loved eating it too, so a whole family 5/5!

I liked this recipe a lot, it is very healthy and nice with a piece of naan bread. The base is indeed a bit bland so personally I would use more spices. I love that if you leave out the salt it is also a very iron-rich meal for my baby.

I loved this recipe! Very practical. But I had an issue of the bottom of my pan burning, so be careful in the end of the cooking time.

I really like this. Especially the nutritional profile. It’s substantial, filling, and easy to make.
The base is quite bland and it definitely needs quite a bit of salt, lemon, chilli flakes and yoghurt with the coriander to give it a final taste.
