This is a go-to dish in our family. Gulpea is an Afghan tomato and cauliflower curry, a vegetarian dish that features diced cauliflower and tomatoes or tomato paste cooked in warm and inviting spices. This simple and nutritious dish is typically served with Afghan-style bread, or over a bed of steamed white rice as a side dish.

Ingredients

  • 3 Tbsp (45 mL)
    vegetable oil
  • 1
    large onion, chopped
  • 3 Tbsp (49 g)
    tomato paste
  • ½ tsp
    ground turmeric
  • 1
    medium head cauliflower, broken into bite-sized pieces
  • 1
    red hot chili pepper, minced
  • 1 cup (240 mL)
    water
  • ¾ tsp
    salt
  • 1 pinch
    ground black pepper

Serves well with

Directions

  1. Add the oil and onion to medium pot on high heat and stir until the onion has become golden.
  2. Add the tomato paste and turmeric, and stir continuously for 30 - 60 seconds to lightly toast.
  3. Then add the remaining ingredients, cover, bring to a boil, and reduce to a gentle simmer, stirring every few minutes until water has been absorbed.
  4. The dish is ready when the cauliflower is soft. Enjoy!

Omg so simple but so outrageously good. Loved!!! Doubled it second time I made it by adding same amount of Yukon Gold Potatoes as cauliflower and multiplied everything else. 😍also used same amount of tomato sauce instead of tomato paste second time and still came out awesome

I made this with a few minor adaptations and it was great! (I assume it would have been just as good without the changes.) I used chili-infused olive oil and then I tossed in about a teaspoon of red pepper flakes and some chopped garlic. Just as an experiment I added about half a teaspoon of liquid smoke (I figured it might give it a fire-cooked flavor). Now I have a way to eat cauliflower, something I'd been avoiding for a long time!

I never really knew how to cook cauliflower so that I like it. My least favourite vegetable in my childhood.
But since I'm very interested in trying recipes from other cultures than my own (German), I had to give this one a go.
And wow! I so enjoyed it! Exactly what I like in a dish: simple, delicious, flavourful. And healthy too!
I added a teaspoon of Dukkah and served it with some plain soy yoghurt.
I had 2 plates as it was so delicious and am stuffed now, but it was worth it! 😊😇
I think I will try some more Afghan Cuisine.

Hey there, Gabby, yes you can! Tomato paste in a tube may have salt already added to it, so you could hold off on adding salt to the dish to start and add it after giving the curry a taste if needed 🙂

This dish is indeed very easy to make and SO fragrant. The whole house smelled divine. I should have doubled the batch of cauliflowers as suggested. I would not hesitate to make this recipe when I have guests over. We served it with rice but with naan bread, it would certainly be a hit.

What kind of rice would you say this goes best with? Your Cauliflower Chickpea Coconut Curry has become a staple in my house, and we love serving it with our heaping piles of jasmine rice and sometimes saffron basmati rice!

An additiin to the recipe if u want to try ,gotta engance the flavor so mich more ! Just add grounded garam masala on top of cauliflower as soon as water is evaporated ,another thing my Mom adds is 2 cloves of garlic being fried golden in 1 tbsp of oil ,and that splash of golden brown garlicky oil is spread on cauliflower in the end ,after stove is turned off. I hope u like this ,as it adds to the taste of cauliflower so much ! Peace from Pakistan .

I can imagine this with potatoes as well.
I'm always confused what to do with cauliflower.

By the way, i cooked the leaves and the bigger stamps with it as well and it's good :) I'm just wondering if that's normal or if I should rather throw it out ?
