  • 3 Tbsp (45 mL)
    vegetable oil
  • 1
    large onion, chopped
  • 3 Tbsp (45 mL)
    canned tomato paste
  • ½ tsp
    ground turmeric
  • 1
    head cauliflower, broken into bite-sized pieces
  • 1
    red hot chili, minced (optional)
  • 1 cup (240 mL)
  • ¾ tsp
  • 1 pinch
    ground black pepper

  1. Add the oil and onion to medium pot on high heat and stir until the onion has become golden.
  2. Add the tomato paste and turmeric, and stir continuously for 30 seconds to lightly toast.
  3. Then add the remaining ingredients, cover, bring to a boil, reduce to a gentle simmer, stirring every 5 minutes until water has been absorbed. The dish is ready when the cauliflower is soft, no longer crunchy, but not mushy.
