  • 11.4 oz (325 g)
    firm tofu
  • ½ cup (120 mL)
    vegan mayonnaise
  • 2 Tbsp (6 g)
    chopped fresh chives
  • 1½ tsp (7 mL)
    Dijon mustard
  • ½ tsp
    curry powder
  • ¼ tsp
    ground turmeric
  • ¼ tsp
  • ¼ tsp
    ground black pepper
  • 3
    romaine lettuce leaves
  • ½
    cucumber, sliced
  • 6
    slices whole wheat bread

  1. Press and drain the tofu, then finely chop it into very small pieces.
  2. Add the tofu to a large bowl, and mix together with the mayonnaise, nutritional yeast, chives, mustard, curry powder, turmeric, salt, and pepper.
  3. Assemble the sandwiches by adding a layer of lettuce, sliced cucumber, and a generous layer of "egg" salad on top of the bread.
  4. Cut in half if desired, and enjoy!


  • * Kala namak, also known as Himalayan black salt, is a salt often used in South Asian cuisine. The sulphur compounds give the salt an egg-like smell and flavour, which makes it perfect to use in a recipe like this one.


  • The assembled sandwiches are best when enjoyed on the same day.
  • The "egg" salad can be stored in an airtight container in the fridge for up to 3 days.

You can eat tofu raw??? I thought it had to be cooked one way or another.

Hey Marianna, that's a super common question! We have eaten it uncooked before although it's always best to follow package instructions or recommendations from your local food safety agency. You could also boil the tofu for a few minutes before mixing it in the bowl if desired 😊

Hello I am coruntlly in weight loss period.Can I have smoothie and egg salad both for breakfast fast ?? Am I over eating in breakfast by having both?? I know I am asking out of your recipe qus .But if you can tell me it will be helpful for me. Hey Brooke! The nutritional yeast helps to add a cheesy and creaminess to the sandwich. You could try substituting the nutritional yeast for pulverized cashews to help mimic the creamy mouthfeel or exclude it if desired for a less cheesy/creamy sandwich filling 😊

Egg salad sandwiches used to be my fave before I was vegan so I was super excited to try this recipe! I loved the combination of the curry flavours alongside the kala namak so give the 'egg' salad a delicious twist. Also it is crazy how similar tofu is to egg in texture in this form!

I was absolutely blown away from this recipe. I used to have egg salad sandwiches a lot growing up, so when I saw this on the video I was over joyed. I made it today and shared some with my mother she couldn't tell the difference from regular egg salad. I didn't have chives so I made it will some fresh dill and added sweet pickle relish to make it closer to what I had as a kid. This was wonderful, thank you for yet another fantastic recipe!

Really great recipe. I have to admit, I was a bit skeptical, but I cannot taste the difference from regular egg salad, and this was so easy to put together. I added some finely diced apple - the crunch and sweet tanginess go great with the "eggs".

This was super tasty and easy! I did not have extra firm tofu because it is not readily accessible to me, but I pressed firm tofu for 20 mins and it worked just as well! Could I use half vegan plain yogurt and half mayo to try to make it healthier?

A lovely substitution to use firm tofu, Tischan! The mayo helps give a thick and creamy flavour while helping to spread out the yellow colour. You could use less if desired. For half plant yogurt, an unsweetened option would work best 😊

Just what I needed after a busy workday. I didn't time it but it felt like a lot less than 15min prep time :) Super fast and effortless!!
I didn't have any chives and while it still tasted great, I also look forward to the next time I'll make it when I can add chives.
