Chickpea salad

6slices rustic bread

3butter lettuce leaves

1large tomato, sliced
Make your own
Directions
- Use a fork to mash together all the ingredients for the chickpea salad in a bowl.
- Mix all the ingredients for the ranch mayo together in a small bowl.
- Toast your slices of bread.
- Smear one side of the bread slices with the vegan ranch mayo and top with the lettuce, tomatoes and chickpea salad. Enjoy!

- †We used Frank's Red Hot Sauce.
Storage
- The prepared sandwich is best enjoyed on the day it's made. Note that the bread will get a bit soggy over time.
- The sandwich filling can be stored in an airtight container in the fridge for up to 2 days.

This was surprisingly delicious! I didn't use as much of celery because we are not a big fan of it. I used Frank's red hot sauce, but our family likes spicy food and I think I would add a bit more black pepper next time. It's herby, fresh with a hint of spice. It was really good and it is a great (summer) sandwich.

This is an immensely delicious sandwich! I didn't quite have everything for ranch dressing but I made a successful substitution with mixed herbs.
This was sooo good! If you don’t like hot, skip the hot sauce and it’s still great! The 1.5 cups of cooked garbanzos is slightly less than a normal sized can of garbanzo beans. I just used the whole 15 oz can and it was perfect. I’ve made something similar in the past as a substitute for tuna sandwiches but the addition of hot sauce and ranch was a great twist. I put this on a gluten free wrap and I’m pretty sure I need seconds.
this was the first meal i ate today and am pretty satisfied!!!
i decided to try something new and actually start a day by making something on my own completely and promising myself that i won’t get mad at myself for doing so if i mess up. when i did mess up or realized i didn’t have all the ingredients i had, i just told myself, just breathe, step back, and think of /look up a substitution! and so i did.
i didn’t have vegan mayonnaise, but you had a recipe for it! and i was excited. didn’t have aquafaba, but learned that a substitute (based on the internet, but not sure if it’s credible) is water mixed with chia seeds and flax seeds which i had so i used that in replacement of the aquafaba (i’m probably spelling this wrong).
i also didn’t have dijon mustard, but my mom gave me this inglehoffer cream style horseradish mustard type custard that she said was better so i was like alright lemme use that.
then i realized that i didn’t have the mixer to mix it all together so i just used a blender for it the vegan mayo.
but for the chickpeas, which i also didn’t have… even tho that’s what the recipe is called, i didn’t want to give up on myself and move on from this recipe. i remembered we have edamame in the fridge that i could probably steam and take out the beans in substitute of the chickpeas lol.
i didn’t have any spice hot sauce so i just left it out. i also didn’t have ranch seasoning, so i looked up how to make it and i used ground mustard, oregano, basil, salt, and pepper.
with all that to say, the lesson i learned here is that you can still make a pretty decent meal even tho you don’t have all the ingredients, but to find what you have on hand already to make it something similar… or even completely different! make it your own signature meal!!! if you don’t have the same bread, that’s ok, if you thought you had lettuce, but ended up using cabbage instead, that’s ok! there’s another idea to use for the next time you make this meal because my mom suggested that i could shred it next time and prefer to do cabbage instead of lettuce. which just proves that you can just experiment! the recipe is just a guideline for where to start and the rest is up to you.

me- i give it a 4/10 for now because i made it and didn’t like it, but in reality, i never really make this stuff and wanted to try something different, so of course i wouldn’t like it at first. didn’t think it was that bad and i think it’s worth something for me to improve upon!

This was fabulous. I could eat it for breakfast, lunch or dinner. I used whole wheat toast but it could also be served on a bed of the lettuce , topped with tomato for gluten free folks.

Fantastic recipe! Used dill relish for pickles, an extra bit of Buffalo sauce (bc we like spice) and a gluten free tortilla to make wrap. Very filling without feeling heavy, thank you!
This was so good! I’m not a big fan of sandwiches usually and this is something I could eat regularly. It has so much flavor and just the right crunch from the pickles and veggies. I also used the PUL recipe for the ranch seasoning and the Mayo came out amazing.

OMG! I made this for lunch today and it was SO GOOD! I subbed sweet pickle relish for the pickles and shallot for the red onion b/c it’s what I had in hand. I made the sandwich on 7 grain bread. The filling did mush from between the bread slices, but nothing that a spoon or fork can’t fix! 😁😋 I’m looking forward to leftovers tomorrow!
I love this for quick easy lunch prep! Best made the night before for the flavors to meld. I’ve found it’s best to serve in a tortilla so the filling doesn’t squish out of the bread (great with spinach and avocado). Super flavorful between ranch and buffalo! I add 1 tsp each garlic and onion powder to this recipe. Also great to use up any veggies on hand, green bell pepper, carrots, etc.

I didn’t have any celery, so I subbed in some green onion and this was delicious! A really nice alternative to tuna salad.
