Hiii Marguerite, sorry to hear! Hmm a couple of things might be happening. If they're turning soggy, the oil may not be quite hot enough or the pan may be overcrowded.
If they're burning before becoming crispy, the oil is likely a bit too hot or the onion slices may be uneven in thickness. We've found that very thin, evenly sliced onions, frying in small batches, and letting them cool completely on paper towel gives the best crispy result 🙌 hope this helps for now 😊
