This is a super quick curry to whip together, making it a great option for busy nights. For this recipe, the key to making it speedy for us was to prep and chop ingredients while other ingredients were on the stove cooking.

Ingredients

  • 1 cup (160 g)
    uncooked red rice
  • 2 tsp (10 mL)
    vegetable oil
  • 1
    medium onion, chopped
  • 3
    cloves garlic, minced
  • 1 Tbsp (6 g)
    freshly grated ginger
  • 2 cups (328 g)
    cooked chickpeas
  • 6.2 oz (175 g)
    button mushrooms, sliced
  • 1 Tbsp (6 g)
    curry powder
  • ½ tsp
    paprika powder
  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • 1
    bell pepper, sliced
  • 1 pinch
    salt
  • 1 pinch
    ground black pepper
  • 4 cups (120 g)
    fresh spinach
  • 15
    cherry tomatoes, halved
  • ½
    lemon, cut into wedges

Directions

  1. Cook the rice according to the package instructions.
  2. Meanwhile, add the oil, onion, garlic, and ginger to a large pot on high heat and sautΓ© for 3 minutes. Add splashes of water as needed to deglaze the pot.
  3. Add the chickpeas and mushrooms to the pot and cook for 5 minutes.
  4. Add the curry and paprika powder and sautΓ© for one minute longer.
  5. Add the coconut milk, bell pepper, salt, and pepper and cook for another 5 minutes.
  6. Add the spinach and tomatoes at the end, and stir. When the spinach has wilted, remove from heat.
  7. Serve the curry with the rice, squeeze over some lemon, and enjoy!

I was so excited to make this, and was quite disappointed with the unaltered results! I felt that it was lacking a good bit of flavor, so added rice vinegar, coconut aminos and some sriracha to spice it up. Other than the lack of spice/saltiness, I really enjoy all the ingredients together. Glad I know for next time!

For me this curry was ok but bit all over the place. There are so many different ingredients that the dish ends up with no focus. Removing the bell pepper and tomato would work better in my opinion. Also it is very bland with the only spice being curry powder. Adding cumin, coriander, and chill upped it a lot for me!

This was d e l i s h o u s ! Just - i made it THAI curry instead - so instead of curry and paprika powders i've added 1 tbsp of green curry paste for 2 portions and 1 tbsp of coconut sugar and 1 tbsp of soy sauce, as you make curry generally. Used green beans for spinach and no salt and pepper - cause curry paste and soy sauce. so just wanted to share how versatile that might be ! Also didn't need rice imo- chickpea was filling enough.
Wouldn't think of lemon, but that is a great add-on.
Also - do you think i could so anything with the water the cooked chickpeas *from frozen) cooked for 5 mins ? Like your chocolate mousse I've been wanting to try / Or isn't there enough 'substance' from cooking from frozen? Love, thanks .
Also i'd love for you to post your workout routine for inspiration !!

Hey Veronika, light coconut milk is more watered down so it's one alternative that offers a more subtle coconut flavour. We haven't tested these out, but possible substitutes could be soy creamer, oat milk, or cashew cream (soaked cashews pulverized), or plant-based greek yogurt. I was just wondering whether it is possible to sub fresh spinach with frozen ones because the frozen ones are washed, organic, cheap and always available and here in France, I can never find fresh washed organic spinach. Big thanks to you for all the delicious and healthy content.

Hey there, Amy, thanks for the question. We generally use a pre-made curry powder mix from our local grocery store. From our understanding, it usually contains a variety of spices with a base of coriander, cumin, chili pepper, and turmeric. Any curry power that's most accessible for you should be fine. We can always adjust the spices to taste 😊 We hope this helps for now!

Hey Raquel! We haven't tested it out, although curries such as this one tend to freeze well. You could freeze it an airtight container and thaw it in the fridge overnight. Some people prefer to omit the spinach for leftovers and add it when reheating on the stovetop for freshness if that's desired as well 😊

Recipe tastes nice but I do have an issue. Underestimating cooking times is useful for not scaring people away but there is a limit. The total cook time is 10 minutes and the first two steps themselves take 8 minutes, so the rest of the process is supposed to take only 2 minutes? Give me a break.
