Dark and cold nights makes me want to curl up with a creamy and warm drink. The cinnamon, vanilla, and maple syrup add just the right boost of sweetness. This velvety drink can be made in the microwave or on the stove. The microwave is faster, but letting everything steep on the stove rounds out the flavours, and makes your home smell amazing!! It tastes extra indulgent and lux, perfect for a cozy afternoon. As the Dutch would say, "Gezellig!".
Creamy & Rich London Fog

2 cups (500 ml) plant milk (we used soy)
2 Earl Grey tea bags
1 tsp (5 ml) maple syrup, or to taste
1/2 tsp vanilla extract
1/8 tsp cinnamon (or 1 cinnamon stick broken into 2 pieces)
Add plant-based milk to a small sauce pan on medium heat. Add the tea bags, cinnamon, maple syrup, and vanilla extract. Stir constantly to prevent scalding the milk, and as soon as you see it start to boil remove it from the heat.
Pour into your favourite mug and enjoy!
Add plant milk into mugs and microwave for 30-40 seconds, checking at the 20 second mark to stir and ensure that the milk isn’t scalding. You don't want to over-heat plant milk.
Add the remaining ingredients, stir and steep for 2-4 minutes. Enjoy!
Storage: best if enjoyed right away, but you can store in the fridge for up to a day. Reheat on the stove or in the microwave.
Variations: Try with a vanilla sweetened milk and omit the maple syrup and vanilla extract. Runnier milks, like almond or rice will steep slightly faster than the thicker barista or soya milks.
