Cranberry Lime Bliss Balls

Okay so this is my first post. Ever. Congratulations to me! I did not intend to make my first recipe with something that had limes in it, I swear. I suppose it was the universe’s way of telling me: when life gives you limes, make a website. So I did! Hope you like it.

I don’t believe too much in coincidences; there is an intricate and delicate way that things fall into place when they’re meant to. A few months ago a series of events lead me to meet a role model, Vesanto Melina.

Side note: Vesanta Melina is a Registered Dietitian and visionary in the field of plant-based nutrition. She is the co-author of several books I highly recommend to anyone venturing into the world of vegetarian, vegan or raw-food lifestyles.

We met at a coffee shop just around the corner from where I live. Later the same night I was hosting a holiday painting party at my apartment with a few friends and I made some bliss balls (or orbs, or energy balls – whatever you want to call them). I decided to take a few of these to Vesanto when we met at the coffee shop.

A few weeks later I received an email from Vesanto asking permission to include the recipe for the cranberry lime bliss balls in her up-coming book: Becoming Plant-Based. Needless to say I was ecstatic! I made another batch, tested out the portions, and to you I present the delicious, energy-dense, and nutrient-rich bliss balls:

Cranberry Lime Bliss Balls

▸ ▹ Vegan, raw, gluten-free, oil-free, soy-free, refined sugar-free

Yield: 24 balls

INGREDIENTS

1 cup (140 g) raw almonds

1 cup (150 g) raw cashews

1/8 tsp salt

1 cup (175 g) dates (if dates are very dry, soak first in warm water for 5 minutes then drain)

2 limes, juice and zest

1 cup (75 g) unsweetened shredded coconut

3/4 cup (90 g) dried cranberries

directions

  1. In a food processor, blend the almonds, cashews, and salt into a course flour. Empty into a large mixing bowl.

  2. In the emptied food processor add the dates, lime juice, lime zest, and shredded coconut and blend until a soft paste is formed. Stop occasionally to scape down the sides.

  3. Add the date paste to the bowl containing the nut flour. Add in the dried cranberries and mix until well combined.

  4. Roll a scoop of the mixture with the palm of your hands to form one-inch balls.

NOTES

  1. Optional toppings: coat balls by rolling them in shredded coconuts, slivered almonds, lime zest and/or chopped dried cranberries.

  2. Storage: place the orbs in the fridge or freezer to keep fresh. ENJOY!
