These are wonderfully dense bars. They're naturally sweetened with dates, and made with whole food ingredients. Make them ahead of time to enjoy as a mid-day snack, or enjoy them for breakfast when on-the-go together with some plant-based yogurt and/or fruit to make it a complete meal.

Directions

  1. Add the ground flaxseeds and water to a small bowl. Mix and sit aside.
  2. Line or lightly grease a 9 x 13 inch (18 x 27 cm) baking dish. Preheat the oven to 350°F (180°C).
  3. Add the hazelnuts, oats, cinnamon, and salt to a food processor. Blend into a flour.
  4. Transfer to a large bowl and add the remaining whole oats to the bowl as well.
  5. Add the dates to the now-empty food processor. Blend until a paste is formed.
  6. Then add the almond butter, coconut oil, vanilla extract, and gelled flaxseeds. Blend until well combined.
  7. Transfer the sticky mixture from the food processor into the large bowl with the dry ingredients. Add the cranberries, pumpkin seeds, pecans, and chocolate to the bowl as well. Mix well.
  8. Transfer the mixture to the baking dish, and press down firmly to smooth out the top. If desired, press on any of the optional toppings, like coconut flakes or more nuts or dried fruit.
  9. Bake on the centre rack of the oven until lightly golden, about 14 - 17 minutes. Let cool completely before cutting into bars. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
  • The granola bars are rather dense. We found that they're a nice compliment to enjoy with something creamy, like crumbled onto some plant-based yogurt or a smoothie.

Storage

  • Store in an airtight container in the fridge for up to 1 week.
  • Store in the freezer for up to 1 month.

Hi Sadia! I would love to make these for a friend, but she has a sorbitol intolerance. Is there a way to substitute the dates with any other sticky ingredient? Would love to hear your thoughts!

Really enjoy the hazelnut base for this, super tasty and a bit different to what I'd normally have. This was my first time baking and did find them quite crumbly - ended up with bars which I put in the freezer but also extra granola which I've added to yogurt. Will look at adjusting the mixture a bit before baking next time to help it stick.

I've been making them a lot since the recipe was published. They are amazing 🤤
On the blog there were also instructions for making roasted hazelnuts - would it be possible to add it to the app as well?

Hey Anita, so glad you're enjoying the bars! We removed the steps for roasting hazelnuts to simplify the recipe. Here's a copy of the steps though:
1) Preheat oven to 350°F (175°C). Spread the hazelnuts onto a rimmed cookie sheet with baking paper underneath, and bake for 8 - 10 minutes, until lightly golden and fragrant, stirring once halfway.
2) Remove the hazelnuts from the oven and allow to cool. Once cooled, pick up handfuls at a time and rub firmly between your palms so the skin falls off. Alternatively, you can rub them in a clean kitchen cloth.

I break one apart and sprinkle over nice cream or (green) smoothie bowl, eat them as a bar as is, or eat them with some fruits and (pb) yoghurt. Love them!

Didn't have pecans and haselnuts, so I just replaced them with walnuts and almonds respectively. Work out great and they take amazing! One more thing added to our list of healthy snacks!

tried this recipe and let me tell you that it was amazing! I swapped pumpkin seeds with sunflower seeds and made a chia egg instead of a flaxegg and it was an absolutely earthy, rich, healthy and nutricious treat. I'll make it again for sure! It reminded me of the flapjacks but more healthy and packed with flavours.

These definitely did not disappoint! I usually make the frozen yogurt breakfast bars but i decided to switch it up this time and i’m glad i did. I kept the recipe the same but i decided to add a handful of frozen berries to the food processor with the mixture and that turned out great. Highly recommend these!!

These are sooo good! I don’t eat plant yogurt very often, but when I do, it always makes me want these bars! They are the perfect accompaniment to the creaminess of the yogurt, and have such a satisfying feel when you bite into their denseness. Crumbled into cashew yogurt with some blueberries makes for a lasting breakfast (or snack). I usually skip the chocolate, but I’m sure that would also be yummy.

I really struggle with low energy levels throughout the day and i got this recipe from the video describing how your food affects your energy. I love how many servings this recipe makes. We've been eating these in the afternoon to curb our afternoon slump. I'm not sure if it's the placebo affect or if they're actually working, but I've been feeling great after I eat one! I will definitely make these again!

These are so good!! I've made these now 25+ times and I even baked and froze 100 before my baby was born. They really helped me get enough nutrients while I was breastfeeding and caring for my daughter. They're now my go-to for friends with newborns.

I love them!
I swapped the hazelnuts for almonds, the pecans for walnuts, as well as the almond butter for peanut Butter. And I left out the pumpkin seeds.
They turned out soo delicious but maybe a little bit dry. I had them for lunch with yoghurt and frozen raspberries. Such a heavenly combination!
I will definitely experiment some more on them 😉

Personally, I would not have these for breakfast due to the coconut oil making them a "less healthy" choice with its high saturated fat content. Is there anything you can sub the coconut oil for?

You could sub the coconut oil with neutral vegetable oil, such as refined olive oil that doesn't impart the olive oil taste. The bars may end up a bit more crumbly, although equally delicious. I have hazelnuts without a 'shell', could I use those? And would they still need to be baked in the oven?

Hi Hawin, thanks for the questions! Yes indeed use hazelnuts without the outer hard shell. The shell of hazelnuts (and most other nuts) generally should be removed before enjoying ☺️

We would still recommend roasting them as this helps bring out the flavour of the nuts and makes blending them a bit easier. We hope you enjoy the bars if you're able to give the recipe a try!

Adding more nut or seed butter, syrup, or dates may help if you experiment with it. This is so delicious! I subbed raisins for dates as I didn’t have any dates at the moment. And I also didn’t have hazelnuts so I put 1/2 cup of almond flour. And 1/4 cup avocado oil instead of coconut oil. And they turned out fantastic! Seriously, my 2.5 yr old, my husband and I ate one each immediately! So yum. Thanks!

Hey there, Elsa! Since coconut oil is solid at room temperature, it helps the bars stay firm. We haven't tested it out with nut butter in place of the oil, although we imagine the bars may end up more crumbly. Adding extra dates or some syrup may help. Do let us know if you experiment with it 😃

Favourite with my teenage son to fill him with energy, always have some on in the freezer for a snack. We swap out the flax for chai which is easier to get here and swap pecan for walnuts as a personal preference.

Delicious bars! Very filling and tasty. I like to cut mine out of the oven in 14 bars and then I have breakfast for a week for 2 people, if we don't snack on them, which is hard ;p. I notice my nutbutter is not as liquid and I don't use soft dates but dates from the baking department, so the mixture is a bit dryer, but is works out great anyway!

These are really delicious and worth the time and effort. They are extremely filling, too. Just one recommendation - don't forget the prepared flax eggs! I ALWAYS forget them initially and wonder why on earth the mixture is so difficult to work with, then look over and see my little dish of the flax eggs waiting for me. If you're short on time and don't really feel like you're going to miss the hazelnut flavor, I also recommend just subbing in approximately 2 cups of almond flour for the 1 cup of whole hazelnuts (that you process into a flour). Add in chopped roasted hazelnuts with the chopped pecans to get the hazelnut flavor back.

Hello! I just made these bars and they are very nice super-rich and healthy snacks. Thank you so much for the recipe. One thing is only that 12 bars seem a bit too much for me. If I freeze them, what do I do after? Should I just leave them to melt at room temperature?

I made these bars for a backpacking trip to have for my breakfast and they were perfect! I love that they aren't too sweet and make for a hearty morning meal (I had 2-3) before we started hiking. I've also enjoyed taking these to work as they make for a more substantial granola bar.

These were quite good, although I preferred the orange zest recipe! I think the best part about these kind of bars is that they keep in the fridge for months and so you make them once and have a snack whenever you want!

Make these! I had to swap out the dates for prunes, abs use peanut butter instead of almond butter, and almonds instead of hazelnuts. And no pecans. It was great! Prepackaged granola has too much sugar and the store brands are worse.

I plan to make two new batches, one with cashew butter, and no almonds. For a friend because of allergies and one I’m gonna bake thinner. Trying to get my toddler to eat them. She is always eating my granola bars, abs I want her to consume this one. I think she was put off by the thickness. I’ll let you know how that turns out.

I love your recipe looks delicious. But I dont have coconut oil. What other substitutes can I use ? Regular oil? Margarine melted?

Hey Tania! Thanks for the kind words and question. You could sub the coconut oil with a neutral vegetable oil, such as refined olive oil that doesn't impart the olive oil taste. Melted margarine is another good idea! We hope you enjoy the breakfast bars 😃

i love. love . love all these meals. I have tried on several occasions to purchase your cook book but every time i hit buy it keeps going on a terminal thinking mode and never gets to the next page. Maybe it's because I am in Tacoma Washington. :( Help please

I absolutely loved these bars! Easy to bake and (too) indulgent for eating😅
The combination of nuts and almonds in various textures with dark chocolate is brilliant!!!
It’s dense without being heavy, which makes it a sufficient afternoon snack in its own right. In accordance with its name, I’ve really discovered how well the bars work as crumbled granola. My favourite combo so far is canned peaches, coconut yoghurt, and one crumbled hazelnut bar😋
Thumbs up that they are freezer compatible
