I don't know if I made a mistake here but the cauliflower never really cooked at all and had a bittertaste to it, it's the first time it happens. The sauce was a good balance to it (even though on its own I find it too sweet) and it masked my cauliflower failure though.

Hi hi, Tess! Thanks so much for trying the nourish bowl. Hmmm one possibility is the florets being a bit large. Cutting them smaller helps them cook through fully. Also, if the tray is crowded, the cauliflower will steam instead of roasting, which affects both texture and flavour.

The bitterness may have come from undercooking, or sometimes the cauliflower itself can taste a bit stronger. Roasting a little longer, until nicely golden, usually helps bring out sweetness. And we totally hear you on the sauce 🫶it’s meant to be on the sweeter side, but you can dial back the sweet chili or agave to taste. Hope this helps for now ✨

Thank you for your reply! I might have overcrowded the oven. I'm sorry if it's a dumb question, but I always thought that vegetables needed a bit of oil to really cook in the oven otherwise it just stays raw in mine. Then I tried your cauliflower wings recipe and it worked wonders coating the cauliflower fully in the water/flour/spices mix then with breadcrumbs. So I thought oil would not be needed if the vegetable is fully coated. But in this nourish bowl recipe, the cauliflower was not coated at all, the chickpea flour/water mix barely drizzled the whole thing so I was wondering if I was supposed to increase the water mix in order for the cauliflower to really cook?

Ohh it's such a great observation, Tess, not dumb at all! You don’t need oil for vegetables to cook through, they’ll still soften in the oven ☺️ Oil mainly helps with browning and crispiness. Sometimes a coating can help lock in moisture and steams the veg from inside, which is perhaps what you experienced with the cauliflower wings.

In this recipe, the chickpea flour mixture isn’t actually meant to fully coat like the wings. It's more like a light coating for flavour, so it can look a bit sparse. Adding more isn't necessary, but you can add more if you'd like to. You can also spray it with some cooking oil if you'd like. Up to you, really! Hope this helps for now!
