Hi PUL team, This recipe looks delicious! I was wondering whether you think it'd be possible to put it in the fridge all in one container for eight hours, then transport it, divide it in glasses and refrigerate for another hour or so?

Hi there, Nienke! Aw we’re glad you’re excited to try it. Yes, that should work, and the taste will be just as good. The only thing to keep in mind is the appearance: chilling it in one container gives you a perfectly smooth top, but once you scoop it into glasses later, it likely won’t level out and become silky-smooth again on its own. If you’re okay with a more rustic finish, go for it! Hope you enjoy it 🫶

Really, reallllly tasty, but the texture was quite runny… what might I have done wrong?

So glad to hear you enjoyed the flavour! If the mixture turned out runny, a couple of things might have happened. The most common cause is that the cream didn’t boil long enough. It needs a full, steady boil for the full 4 minutes so it can reduce slightly and thicken as it chills.
Another possibility is the type of vegan whipping cream. Some brands without a stabilizer don’t set as firmly as others once chilled. In case it helps, we use the is the Alpro brand. If you try it again, giving the cream a strong, bubbling boil and making sure it’s fully refrigerated for the full 8 hours should help it set properly. I served it for New Year eve ( i used Flora brand for the cream) and i tried two versions : pomelo and lemon, we loved it both so much, it's so fresh ( and it's so easy and quick to make) Bonne année !
