  • 1 Tbsp (15 mL)
    vegetable oil
  • 4
    cloves garlic, minced
  • 1
    large onion, diced
  • 2
    vegetable bouillon cubes
  • 1 tsp (2 g)
    chili flakes
  • 3 cups (285 g)
    dry penne pasta
  • 3 cups (720 mL)
    passata sauce
  • 1½ cups (360 mL)
    water
  • ¾ cup (184 g)
  • 1
    zucchini, sliced into half-moons
  • ¾ cup (180 mL)
    soy cooking cream
  • 1
    roasted red bell pepper from a jar, chopped
  • ½ cup (88 g)
    marinated artichoke hearts, chopped
  • 1½ cups (30 g)
    arugula

Optional toppings

  • roasted pine nuts

Directions

  1. Add the oil to a large pot on medium-high heat. When hot, add the garlic, onion, bouillon, and chili flakes. Cook for 2 - 3 minutes.
  2. Then add the uncooked pasta, passata sauce, water, hummus, and nutritional yeast to the pot.
  3. Reduce heat to medium, partially cover with a lid, and cook for 10 minutes. Check on the pasta a few times and stir to prevent sticking to the bottom of the pot.
  4. Add the zucchini, cooking cream, bell pepper, and artichokes. Cook until the pasta is al dente, about another 5 minutes.
  5. Stir in the arugula when ready to serve. Garnish as desired, and enjoy!

  • Passata is a 100% tomato-based, strained, puree.

very good, but if you leave the garlic out, you will need some spices like rosemary or so.
And its important to cook it partially covered, not full covered, like i do. (because I wanted to avoid steam and always do it that way to save energy😅). Otherwise you're more likely to have soup😇

I'm not a big fan of this whole One-pot-thing. My Noodles get too hard or too soft and are never the way I want them to be. But the sauce ist delicious and I will cook it separately next time 👍🏻

1000% my favourite recipe here! I have made this SO many times since serving it to my parents for our first try ;) I finally had to come on to rate it because I just made it sans recipe (since I thought that I *had* to have remembered all the ingredients) and just wanted to say that you don't actually need the cream for a velvety smooth sauce (ask me how I know lol) - you just need to add some more water. It doesn't stick as well to the final dish as it's a bit runnier than before but still delicious.

For those interested: works well for meal prep and in a pressure cooker* (instant pot). Just omit the veggies at first since they don't need to cook that long and stir them in after the pasta is cooked. I didn't use zucchini this time though because it's not in season. You might need to either cook it separately or adjust the cooking time of the pasta, like a minute less, put in the zucchini and cook with an open lid

*I put mine on manual, high pressure and cooking time around half of what the pasta package says (so for 8min pasta 4 min) and then quick release.

Ever since I first tried this recipe it has become a favorite! Especially when I have guests over I like to impress them with this dish 😉. I am thinking of making this dish (as one of a few) for a dinner I will be hosting for 20 people. Do you have any recommendations for scaling this recipe up a lot? Could I then make the sauce in one pot and cook the pasta in another? Should I then use less water in the sauce, and maybe home made hummus to reduce costs? Would love to hear your ideas 😊

Hey Miriam, we're so glad you're enjoying the pasta! You can indeed make the sauce in one large pot and cook the pasta separately to avoid overcrowding. Keeping them separate will also let you more easily taste the sauce and adjust any seasoning you feel might be needed. We'd recommend starting with less water in the sauce and adding more as needed to the desired consistency. Using homemade hummus is a lovely idea for a cost-effective option. Happy hosting 😃

This is one of my favourite ways to have pasta (and I don't even normally like humus!). Made it so many times with different veggie combos and with and without adding the extra cream/alternative and it's still yummy. I find it way too liquidy though if I follow the recipe to the letter so I just add water in small amounts as needed rather than in one go as well as reducing the tomato to one jars worth. Plus I always reduce the chilli and garlic on all PUL recipies as I do not have the same stamina for them as your team obviously does haha! But that's a personal preference thing :)

Super creamy, luscious, and delicious! I love pink sauce and love that hummus is the main driver of creaminess for this one. I actually made it with long-strand pasta that I cooked in water separately and then added to the pan with the sauce once slightly pre-al dente (so two-pot pasta 🤷‍♀️🥴!) I ended up omitting the artichokes and dialed down the heat (just for preference). I also added more hummus for extra creaminess and used a full-fat oat milk instead of coconut. Thinking of using roasted red pepper hummus next time, as well🤔. But definitely making it again ….such a comforting and delightful sauce! Thanks, as always, PUL💕

This was really good! Such a nice mix of tomato and cream flavour. If you like your zucchini more cooked, I would recommend just adding the half-moons at the start (or a couple minutes in), since for me they were still quite a bit too crunchy with only 5 minutes of cooking time.

Hi! Love this recipe. I haven't made it in a couple years admittedly, but the last couple times I made it I had a problem with the pasta sticking to the bottom of the pan. I'm not sure what I was doing wrong, I tried to stir the pasta consistently, add more oil, but nothing worked. Do you have any suggestions, or would it be easier for me to just cook the pasta separate from the sauce?

Hey Bruna, I can think of three things that might help 1) drop the heat, if it's too hot the bottom can indeed burn, 2) try a cast-iron or non-stick pot, 3) stir often to prevent sticking. You can definitely also cook the pasta separately, but then just a heads up to omit the water in the sauce, or add in small splashes as needed until the sauce is at your desired consistency. I hope this helps! 😊

Hey Tom! Diced tomatoes can work as an alternative to tomato sauce. If using canned diced tomatoes, you could drain and blend to a smooth consistency, or leave the diced tomatoes whole for a chunkier sauce adding liquid to the desired consistency.

This recipe ist absolutely incredible and one of our long-time favorites! We use 1 zucchini and 1 fresh bell pepper for 2 people and we roast and season the veggies in a separate pan before adding them to the pot. It takes a little longer but it tastes amazing!

Just cooked this recipe and the sauce really is delicious! Very rich and comforting and it comes together so quickly, too! I don't like zucchini or artichokes so I substituted for mushrooms and brussel sprouts which was a fun twist. So looking forward to having the leftovers tomorrow!

This is my favourite pasta dish ever. I am not personally a fan of zucchini, so I substitute this for mushrooms and it is delicious!

So delicious! I was looking for a vegan/vegetarian recipe and I found this dish. Full of veggies and leaves you full and happy. Even my bf, who's a picky eater, loved it.

Ps: if you don't find pine nuts or want to make it more budget friendly, you can totally use roasted unsalted peanuts

Loved this recipe! Never thought about adding hummus to pasta, and I really loved the spiciness and veggies!
I used the Banza chickpea pasta and found that there was still a lot of liquid left at the end, which I’m guessing is because the penne doesn’t absorb much liquid. Still delicious!!

This meal gets made very frequently. I love it, and the fact that it's a one-pot meal makes it even better. I made this one night for my father who is an avid meat eater, he really liked it and said it was very filling!

This is a staple recipe in my kitchen. My non-vegan partner absolutely loves eating this and I love making it because it is so easy because of the one-pot aspect. Flavors are on point and can be custom to what you want more or less of. I think the directions/order could be changed. I have tweaked it to fit my preferences. I like the vegetables cooked more and the way this recipe is written, the veggies come out harder/undercooked. I find that they need way longer to steam in the sauce, so instead, I just cook the veggies in the pot first and then add my sauce and hummus, and pasta.

I also cooked this dish tonight. For hummus, I used the rest I had from a wild garlic one I made in April, as wild garlic was abundant.
One question about the quantities, esp pasta: what's the reason of not using the whole package of pasta (I think it comes everywhere in 500 gr packages)? I mean, what do you do with the rest 215 gr of penne left over in the package?... I find it more practical when the recipes ask for the entire or half of the packaged ingredients, don't you?
Or does it have to do with your cup measurement? Or the servings? Cheers, Angeliki

Hello Angeliki, thank you for the question! We opted to round to 3 cups of pasta, which for penne worked out to be around 285 grams, as we believed this may be easier to quantify. In our experience, bags of pasta can vary a lot depending on the brand, location, and how it's packaged (for example, bulk versus non-bulk packaging). We've taken note of your comment to consider for future recipes though and the feedback is very much appreciated!

In the meantime, using our serving size adjuster (the plus and minus buttons beside the serving size) may be helpful. For this recipe, it looks like adjusting it to 7 servings will provide the portions for using 500 grams of penne 🙂 Do let us know if there's anything else we can assist with ✨

I have never cooked or baked with the cup method, so this is why I feel a bit awkward with it, plus I love precision.
But I think that sometimes recipes are indeed just inspirations where we can adjust to the quantities that are working best for each of us. I have some roasted peppers and artichokes leftovers in the glass from that recipe which I plan to use shortly. Do you have any suggestions?
Good point about the bulk products, too! I just have to weigh all the carbohydrates before cooking, because my husband is diabetic and needs it for the insulin calculation!

Hey there Mp, we usually buy a brand called Maggi from a local store here called Albert Heijn. If you prefer, the vegetable bouillon cube can be substituted for vegetable stock or broth. Give it a taste test, and add more salt if you think it needs :)

Feel free to use any hummus, PS! It will help add creaminess and a bit of flavour, so perhaps a roasted red pepper or classic garlic hummus would compliment the flavours nicely. Whatever you prefer 😁

This is a pasta recipe that I keep coming back to! I've made this countless times with many veggie variations, and this is easily one of my favorite recipes ever. My partner requests this one often, and considering it is so easy to make, I would make it every day if it was acceptable lol. Definitely recommend this for those that love pasta with a kick of spice to it :)
