I’m hanging on to the last few threads of summer now that September has begun. This juice is refreshing and tropical which helps me forget about how cold and rainy it’s about to become.
Plus, it's plain beautiful to look at, especially with that pineapple garnish.
Typically, I prefer smoothies over juices because they use up the entire fruit - pulp included. This means a higher fibre content and longer satiation. With that said, there is something incredibly refreshing and light about juices, which is why I decided to share this recipe before the landslide of hearty winter soups/stews and pumpkin-everything recipes take over. Yum!
Did You Know: Do you ever get a raw or irritated feeling on your tongue after eating pineapples? Pineapples contain a protein-digesting enzyme called 'bromelain' which actually digests or "tenderizes" the protein that makes up your tongue! Don't worry, it's harmless and temporary as your cells regenerate themselves shortly after.
Tropical Pineapple Green Juice
▸ ▹ Vegan, raw, gluten-free, oil-free, refined sugar-free, nut-free
Yield: 2 servings
Prep Time: 10 min
Total Time: 10 min
1/2 medium pineapple, peeled and chopped
1 medium English cucumber
5 large leaves kale
10 leaves fresh basil (optional)
Add ingredients to a juicer, alternating between adding bits of pineapples and leaves of kale so as to extract the maximum amount of juice. Serve immediately and enjoy!
Variations: Add celery, green apple or mint in place of basil leaves if desired! If you want it tasting more tropical, simply add more pineapple or a splash of coconut water.
Storage: Best if enjoyed immediately. Alternatively, store in an air-tight glass jar in the fridge for up to one day.
