Sooooo delicious. I was a little confused after blending because it looked white and creamy. Turns out there's a good deal of foam and it takes a few minutes to settle. Delicious and easy. It will bring you back to life during the summer heat!

Turned out pretty great! I used frozen pineapple but didn’t have lime juice, and just kept the fiber fluff on top. I imagine this would also be really good with coconut cream and ginger.. maybe next time!

I used fresh pineapple and as a result it was lots of work for a little bit of juice but the end result was 10/10 for taste especially on a hot day in the sun. Next time I’ll be sure to use frozen so I can enjoy it more.
