Peach Thyme Iced Tea

Did you know that the ancient Greeks used thyme like incense and burnt it in their temples? They believed it was a source of courage. A herb with a rich history and a lot of flavour, which goes so well in this peach thyme iced tea.

Ingredients

Lemon tea

  • 4 cups (960 mL)
    boiling water, ideally around 185°F (85°C)
  • 4
    white tea bags
  • 3
    lemons, juiced

Peach thyme syrup

  • 6
    peaches, roughly chopped
  • 10
    sprigs fresh thyme
  • 1 cup (240 mL)
    water
  • ⅓ cup (80 mL)

Drink assembly

  • 1½ cups (166 g)
    ice cubes
  • ½
    peach, sliced
  • 4
    sprigs fresh thyme

Directions

  1. Add the boiled water and tea bags to a large jar and let it steep for 8 - 10 minutes.
  2. Then remove the tea bags and let the tea cool off. Once cooled, stir in the lemon juice.
  3. Add the peaches, thyme, water, and maple syrup to a saucepan.
  4. Bring to a boil, then reduce to a gentle simmer and cook uncovered for about 20 minutes, stirring occasionally. Once softened, mash the peaches using the back of a spatula or tamper.
  5. Place a sieve over a bowl and strain through the peach mixture. Using the back of a spoon, press out as much liquid from the mixture into the bowl as possible*. Let this cool off completely.
  6. Divide the ice cubes between your glasses. Then pour in one part peach syrup to two parts of the cooled lemon tea mixture.
  7. Taste test and sweeten with more maple syrup or agave syrup if desired. Stir, garnish, and enjoy!

Notes

  • * No need to throw away the peach purée that remains in the sieve. You can either eat it as is (it's like eating applesauce!) or add it to a smoothie or oatmeal.

Storage

  • The syrup can be made ahead and stored in a jar in the fridge for up to 3 days.
  • The tea and syrup mix can be stored in a glass jar in the fridge for up to 2 days, but add the ice just before enjoying.

Hey Vessa, we imagine you could - just be sure to drain and rinse the peaches well since they may be in a sweetened syrup. You also likely won't need to cook the peach mixture for as long since canned varieties are often softer than fresh. Hugs to Jamaica 🤗

I’m still not quite sure of this one. I didn’t have white or green tea and so used black tea instead. Made it pretty light because I didn’t want an overpowering taste of tea but what actually became overpowering was the lemon flavour. My partner, though, loved it and could taste the peaches more than I could. I am committed to trying this recipe again by sticking to the actual ingredients listed. Will keep you posted. For now, I can say this - don’t try this with black tea. I’m sure it tastes better with a subtler tea.

Made this drink for my southern parents here in Oklahoma, they’re not big on anything truly healthy, they’re more of the “steak and potatoes” type, but I’ve been trying to get them to get more plant-based nutrients, so I made this.

2/3 the recipe using thawed frozen peaches instead of fresh, and I think it’s perfect! I’ve never tried thyme on its own, so I was a little nervous to have it in a drink, but I loved the result. This summer when we’re out in the garden, I’ll probably make a big batch of this for the next few days or for the hot sun riding horses. Refreshing and invigorating, I could drink this all day; thank you Sadia!

Can we use white peach instead? I couldn't find yellow peaches today. Also wondering if we can use dried mint instead of thyme? If so, at what point should it be added? Should I cook with peaches or just add later on top? Thanks!

Hey Mahima, yes, white peaches can be used! Dried mint will provide a much more concentrated flavour compared to fresh thyme. If possible, perhaps omitting the thyme, using an alternative fresh herb, or adding a smaller amount of the mint to taste to the syrup may work best. If you start with less you can always add more as desired 😊

Oh.. and I didn't have fresh thyme on hand, so I used dried thyme, which seem to work just as fine.
(Though keep in mind, that I haven't tried with fresh thyme ;-). )

Absolutely love this recipe!
The first time I made it, I only made the peach syrup and made a special gin tonics out of it! It was delicious! Since I had left-over syrup, I made some tea to follow the recipe and had it while on a hike. Very refreshing!

Loved this recipe! Made it twice last summer and it was highly appreciated by my family, too! I made it with rosemary instead of thyme though (couldn't get fresh thyme anywhere in Bucharest, August last year...) I intend on trying again but with thyme this time :)
Also it's very useful when you bought too many peaches and want to put them go good use!

Hey Priya, any maple syrup should do. We get different brands each time, but find that as long as it's 100% maple syrup, it works great!

You should be able to find it in the coffee and tea aisle of larger grocery stores, or online (such as amazon.ca/s?k=white+tea&ref=nb_sb_noss). Alternatively, you could use a mild-flavoured green tea or another desired type of tea ✨🙂
