This is our go-to burger recipe. The delicious patties are made with a mixture of pinto beans, sunflower seeds, oats, and aromatic spices. Served on a soft bun with sautéed mushrooms and bell peppers in chipotle adobo sauce, and served with a zesty Cajun mayo.

Ingredients

Patties

  • 2 Tbsp (14 g)
    ground flaxseeds
  • ¼ cup (60 mL)
    water
  • 1 tsp (5 mL)
    olive oil
  • 2
    medium onions, diced
  • 3
    cloves garlic, minced
  • 1½ cups (256 g)
    cooked pinto beans
  • ⅓ cup (48 g)
    roasted sunflower seeds
  • ¾ cup (76 g)
  • 1 Tbsp (2 g)
  • ½ Tbsp (3 g)
    ground cumin
  • ½ Tbsp (3 g)
    paprika powder
  • 2 tsp (5 g)

Sautéed veggies

  • 1 tsp (5 mL)
    olive oil
  • 9.9 oz (280 g)
    button mushrooms, thinly sliced
  • 2
    red bell peppers, thinly sliced
  • 3 Tbsp (45 mL)

Cajun 'mayo'

Burger assembly

  • 6
    burger buns
  • 1 cup (20 g)
    arugula
  • 1 cup (219 g)
    coleslaw (optional)
  • ¼ cup (38 g)
    pickled jalapeños, sliced (optional)

Directions

  1. Add the ground flaxseeds and water to a large bowl, mix, and set aside to gel.
  2. Add the oil to a sauté pan on high heat. When hot, add the onions and garlic and sauté until golden. Transfer the mixture to the bowl containing the flaxseeds.
  3. Return the empty pan to the stove and sauté the mushrooms in oil on medium-high heat for 5 minutes.
  4. Then, add the bell peppers, and chipotle sauce. Cook for another 3 minutes. Set aside.
  5. Returning to the bowl, add the remaining ingredients for the patties. Use a fork to mash everything together, and set aside.
  6. Add the ingredients for the cajun ‘mayo’ to a bowl and mix together.
  7. Scoop up a heaping ½ cup of the bean mixture into your hands and shape them into patties.
  8. Add some oil to a non-stick pan on medium-high heat. Cook the patties for 3 - 4 minutes per side, or until lightly golden.
  9. Serve on burger buns with coleslaw, the sautéed mushroom and bell pepper mix, and topped with Cajun mayo, arugula, and jalapeños. Enjoy!

Storage

  • Store the cooked patties in airtight containers in the fridge for up to 3 days, or in the freezer for up to 2 months.

We used kidney beans instead of pinto beans and used different but similar sauces. The burgers were delicious and if you're careful, they are stable enough. I can recommend adding vegan cheese on top once you've flipped them and closing the pan with a lid, so the cheese can melt.

So many great PUL recipes, but this was a miss for me, and way too much onion in the burgers - ‘medium’ isn’t measurement.
(Also, what’s 1/2 tbsp? It’s like saying 1/7 cup. Might look neater in recipe, but it’s not an actual measurement either.)

Hey Rút, we're sorry to hear this recipe was a miss for you, but appreciate the feedback! One medium onion for us is around 110 grams (3.9 ounces). Half a tablespoon (tbsp) is equal to one and a half teaspoons.

Ah, onion grammes/ounces would have been really useful to know! Why not just put 1 1/2 tsps in recipe?

Hey Rút, the half-tablespoon measurement is commonly used and is labeled as 1/2 Tbsp here in the Netherlands, and in a similar way in Canada. It is possible, though, that some manufacturers of measuring spoons might not include this specific size in their sets. We've decided to maintain the use of 1/2 Tbsp because it allows for measuring with a single utensil, which makes the process faster, as opposed to using two utensils (a 1 tsp measuring spoon and a 1/2 tsp measuring spoon). I hope this helps :)

Ah, we’ve different 3 sets of measuring spoons and none have that measure; we won’t be buying another set! Maybe a key somewhere would be useful? 1/2 tbsp = 3 x 1/2 tsp; medium onion = 110g etc

Also noticed the app changes ‘my recipe’ measurements to 1/2tbsp when it’s specifically not entered. That’s a bit frustrating, especially for own recipes.

loved it! I made it with lentils and wasn't able to mash them as thoroughly as I wanted to. maybe if I first mashed them in a bowl on their own, or even put them in a food processor, they would have come out better. as it is the patties are a little unstable. I still love this recipe though!

The burgers were delicious and pretty fast and easy to make. 😄👍 We added some glazed onions and guacamole and iceberg lettuce instead of rocket and coleslaw because that's what we had and our was still really good!

Hey Katerina, we haven't tested out barbecuing these patties, but we don't imagine they would grill well as the patties are rather soft. Frying on the pan is the best bet for these ones to ensure they hold their shape 🤗

Hey Elsa, mmm so many burgers! We haven't tested this recipe in the oven but imagine you could. For example, perhaps 375°F for 10 minutes per side is a starting point. We'd suggest keeping a closer eye on the patties though since every oven tends to be different. If the burger patties don't get as crispy as desired, you could also broil them shortly 😊

Delicious and fairly easy to make! The burger patties had a really sticky consistency, but they formed just fine and easily flipped. Next time, I’ll cook a bit lower and slower, so the inside gets more cooked. Didn’t make the Cajun Mayo, but made the mushroom/red bell topping. Love this burger!

Hey there, Hagit, that's a great question! The ground flax seeds in water form a gel that helps act as a glue so the burger patties bind together. You could substitute the ground flax seeds for another ground seed, such as chia seeds, as ground chia seeds work well as a substitute!

Alternatively, you could experiment with some other ingredients that act as a binder, such as mashed banana, apple sauce, or a commercial egg replacer. These may impact the patty as they're generally sweeter in taste though. Let us know how it goes if you give any of these ideas a try 😃
