Delicious and easy and quick to make. One of those quick simple meals that feel very quality.
Used smoked paprika instead and did the trick still. And added water as I went so I could have the desired thickness of the sauce as everything cooked down.
For us, it seemed a bit too much water. We've then split the sauce in half and let the water evaporate. Next time we'll want to try and roast the veggies off in the oven first.
Nonetheless, it is a really tasty recipe and we're full and content after eating :)
Absolutely delicious, easy and a great way to enjoy eggplant. A bit watery so used a bit of cornflour, would use a bit less water next time. And eggplant needs a bit more time but worth the wait. I used all the ingredients listed except for the parsley and I think it really elevated the dish, wouldn't substitute here myself

I replaced the cream cheese with coconut milk and I used cherry tomatoes (because that's what I had), and it was really good, it worked well and was yummy and easy to do! Will do it again!
I just downloaded the app and this was my first dish. It was absolutely delicious! I added zucchini too. It did take longer than stated to cook the eggplant.

Such a tasty and straightforward recipe! I love eggplant and I always have my eyes open for new ways to use it. I think this is my first pasta dish?! I added some red lentils too which worked well.

Very creative way to prepare eggplant and I really enjoyed the flavor. However, it took me much longer than stated for the eggplant to soften, other than that it turned out great :)

Usually I’m not a huge fan of eggplant but in this recipe it was really nice and soaked up all the sauce😋
Amazing! My non-vegan kids lived it and they hate eggplant! I never thought of peeling it! I also added some seasoned tofu for more protein and it was a hit. I loved it too, but thats no surprise with a PUL recepie
