This delicious stew is hearty, rich, and comforting. The beets add a delicious earthiness to this dish, that compliment perfectly with the sweetness of the carrots. The thyme rounds it all up, offering a rustic yet complex bowl. Make sure to have some bread on the side, you will want to mop every last bit!

I loved this recipe! Reminded me a little of bortsch, just with protein. I will be preparing this dish for my postpartum time, since it is freezer friendly. Thank you lots for having the filter “freezer friendly”, this makes the search for the mealprep so much easier. Are you planing on creating a video on mealprep for postpartum? Greetings from Germany.

Heyy Polina! So happy to hear the beet and lentil stew was a hit ☺️ and thanks so much for your question!
We’ve noted down the idea for a postpartum meal prep collection. In the meantime, our “Pregnancy fuel” and “Make-ahead mains” recipe collections might be helpful. You can find them by tapping “More collections” below the Curry Lovers collection on the home tab, and then searching “freezer.”
We also share some postpartum tips in our Pregnancy eBook, although this is separate from the app and available for purchase on our website. Hope this helps for now 🫶

Tastes so good - I don’t even like beetroot usually! Scaled up to 4 portions and there seems to be way too much liquid. Ended up straining the solids and putting back in a bit of the liquid. Is this an error? Would estimate 250 - 500 ml too much. Lost a star just for the hassle of straining, not the taste. Ps the yoghurt really makes it

Heyy Louise, thanks so much for trying the recipe and for taking the time to share this feedback! 😊 We’re so glad to hear you enjoyed the flavour, especially if beetroot isn’t usually your thing!
We’re sorry to hear the stew ended up a bit too liquidy when scaling it up. In the app, the ingredient amounts scale proportionally, but the timers stay the same. With soups and stews, increasing the portion size often means the liquid needs a little more time to reduce. The size of the pot or pan can also make a difference in how much liquid evaporates during cooking. We used a fairly wide sauté pan with low sides, which allowed for lots of evaporation during the 15 minutes of simmering while the veggies cooked. If your pot is narrower and has higher sides, less liquid will evaporate, which can make the stew seem more liquidy. I hope this helps for now, and thanks again for taking the time to share your experience with it 💛

Very good 😊. I added a small amount of maple syrup (about a teaspoon) to balance it out a bit. Definitely going to make this recipe again soon 😊😊😊

Super quick & easy, but so flavourful! Swapped the vinegar for a nice splash of red wine, really lovely :))

Really, really great! Even tasted a bit meaty and super easy to make... Definitely one for the rotation!

That was really delicious! The vinegar gave everything such a good flavor :) I also added potatoes at the beginning and used raw beetroot. I didn't know that beetroot takes longer to cook than potatoes 🫣 I should have added them first. I cooked everything a little longer. They were still a little crunchy, but that was fine!

Hii Atessa! Awe so glad you enjoyed it despite the beet taking longer than expected to cook! Beet can be surprisingly stubborn 😅 thanks for sharing the tweaks 🤗

I made this dish also with raw beetroot, added it for frying soon after carrots and it worked well. Really liked the recipe overall, simple and delicious 😊
