Smokey lentil stew

2 Tbsp (30 mL)vegetable oil

2medium onions, finely diced

2 Tbsp (33 g)tomato paste

½ Tbsp (3 g)ground cumin

3 cups (720 mL)vegetable stock

1½ cups (38 g)kale, finely chopped

1 cup (180 g)cooked brown lentils
-
⅓ cup (67 g)uncooked basmati rice, rinsed

2 tsp (10 mL)dark soy sauce (optional)

Make your own
Directions
- Add the oil, onion, and salt to a large pot on medium-high heat. Cook until lightly caramelized, about 15 minutes. Add splashes of water as needed to deglaze the pan.
- Once caramelized, add the garlic, tomato paste, smoked paprika, and cumin. Cook for 1 more minute. Stir throughout.
- Add the remaining stew ingredients.
- Cook uncovered at a simmer until the rice is cooked through, around 15 minutes. Stir often. Taste and adjust the seasonings as needed.
- Divide the stew into bowls and top off with dollops of aioli. Garnish as desired, and enjoy!
Storage
- Store in an airtight container in the fridge for up to 3 days.

This is like one of the best things I tried, it’s so incredibly delicious and so comforting, especially for colder days. It’s perfect for meal prep and it doesn’t take too much time or effort. Thanks a lot, I’m definitely making this again! <3
It was good, but the smokey flavor was a bit too much for my taste. I will use less smoked paprika powder next time and maybe add carrot for more sweetness.
This was delicious! We are a Dairy free household so these recipes are perfect for ideas and then we add or swap protein when we want to but this was so perfect for a cold December day.
This is one of my favourite new recipes that I've tried recently. The flavours were spot on and it was super delicious and warming. I added in leeks, carrots and spinach instead of the kale and it was perfection. Thank you for another winning one-pot recipe!
Lovely dish! I made it in the instant pot with uncooked green lentils. I saiteed some red bell pepper and zucchini and added that at the end of cooking. Instead of the aioli I substituted a can of coconut milk for 1.5 cups of the stock and used coconut aminos vs the soy sauce. Definitely adding to my recipe rotation! So easy and tasty😋

I used green lentils because that's all I had, and spinach instead of kale. This was a warm and satisfying lunch on a snowy day, will definitely make again. Delicious!

This is divine and if you are well prepared ahead, takes very little time from start to finish, I even cooked the lentils from dry, it's easy. Yet it hits the spot plus is a massive crowd pleaser. 5 out of 5 for me

It turned out very fast, and is delicious, the only adjustment I need to make for myself is less soy sauce:)
