Spicy One-Pot Mexican Inspired Quinoa

This spicy quinoa comes together really quickly and just in one pot. So no need to dirty more dishes. The chili and jalapeños give the dish a spicy kick. The beans, corn, and tomatoes make the dish very wholesome and delicious. Combined with some lime juice and creamy avocado, this is a perfect weeknight dinner.

Such a joy to put together using just one pot! My local grocery store doesn’t let me buy a red chili on its own, so I subbed a fresh jalapeño with the seeds removed and it worked perfectly! Another delicious and easy PUL recipe 🍅🥑🧄🧅

This is such a delicious dish ❤️ Loved it. Super quick and easy to make, also the first time i enjoyed eating quinoa 🙈 I dnt like the texture or the taste of quinoa 99% of the time, but in this dish it works so well. You can use rice instead of quinoa, although you’ll need to adjust the liquid and cooking time since rice cooks differently. For example, you could use white rice and add a bit more broth, then simmer until tender. Keep an eye on it and add a splash more liquid if needed 🤗 Hope you love it!
