I only made the tofu as a component for another bowl and I absolutely loved it. I added some tiny pieces of broccoli with the onions and garlic and enjoyed the variation in texture. I had the leftovers as a topping on avocado sourdough toast and would totally recommend.
Better than any restaurant bowl! It is quite a few ingredients, but it’s worth it!
I used the chipotle peppers in adobo sauce, but the amount was clearly not enough, the beans would have been too dry. So I dumped a can of salsa in there as well, worked out nicely!
This is a delicious and different take on a burrito bowl. The walnuts and chipotles in adobo really make it have unique flavours

Very satisfying. I had red kidney beans already cooked (I heated them in a bit of broth) and I replaced the walnuts with half cashews, half sunflower seeds.

I'd love to try this recipe, but is there anything that can replace the chipotle adobo sauce as I cannot find it in my region and I don't eat spicy (hot) food?
