This flavoursome bowl takes inspiration from Latin American dishes like the classic pabellón criollo from Venezuela. While a dish like this would normally feature plantains, in this case, they get swapped for the sweeter, more accessible bananas. Trust us, it works! They compliment the warm and spicy notes of the beans to perfection, creating a dish packed with protein and fibre!

Straight to the faves! We devoured those bowls XD All the flavors go so well together, the spicy with the sweet bananas was such a good combo! We ate the full 4 portions in one meal while being two, so I guess next time I'll remember to double the dose, it's too addictive to eat just a little of each ^^ (I kind of improvised an adobo sauce from adobo peppers, water, white vinegar, cumin and canelle) I'd love a recipe for an adobo pepper sauce, as you suggest it in many recipes!

Oh we're smiling from ear to ear reading this, Nohya! Thanks for the glowing review. Your homemade adobo sauce sounds lovely. We'll note down the idea, and in the meantime, you may enjoy our "Coffee & Chipotle Hot Sauce" recipe for some alternative inspiration 😊
