This tomato tartare is an umami bomb. The slow dehydration of the tomatoes in the oven not only intensifies their flavour, but adds a delicate meaty bite to them. Had an issue with this one in that the oven temperature was too hot. The tomatoes were sadly burnt within 20 mins and stuck to the wire rack. Will definitely try it again but at a much lower oven temperature. What I got to eat was delicious however.

Hey Clare, thanks so much for giving the recipe a try and for sharing your experience! If your oven has a fan setting (often called convection), it can cause food to cook much faster. For our recipes, we use the regular top and bottom heating (not fan-assisted). If you use convection, you'll likely find better results by lowering the temperature slightly, reducing the baking time, or switching to the standard heating option for our recipes.

This was really great! Very much worth a bit of extra labor - it was a big hit at my dinner party. The texture and flavor of the tomatoes turned out perfect. People asked me “what the red stuff was” because they couldn’t tell!

Hello i wonder if I can use only the Worcestershire sauce and can I use a cucumber instead of pickles cause everytime I buy a cucumber there is always a piece that I don’t know what to do with ? Thank you. I can’t wait to try this.

Hey Jess, you use only Worcestershire sauce if you prefer, bu it'll change the balance of flavours slightly. Maybe start with less and add more to taste. As for the cucumber, it will have a milder flavour, while still adding a crunch-factor, but we imagine it'll still work well 🤗
