    burrito seasoning

    vegetable oil

Macaroni salad

  • 1 cup (122 g)
    dry whole wheat macaroni
  • 1 cup (138 g)
    frozen green peas
  • 1
    carrot, shredded
  • ¾ cup (180 mL)
    unsweetened soy yogurt
  • 2 Tbsp (20 g)
    minced onion (optional)
  • 2 Tbsp (18 g)
    burrito seasoning
  • ½
    vegetable bouillon cube, crumbled
  • 1 pinch
ground black pepper, plus more to taste

Quick salsa

  • 1 cup (240 g)
    canned diced tomatoes
  • ¼
    medium onion, minced

    clove garlic, crushed
  • 1 pinch
    salt
  • 1 pinch
    ground black pepper

Optional topping

  • fresh cilantro

Directions

  1. Cook the lentils in a saucepan according to the package instruction.
  2. In a large pot, cook the macaroni according to the package instructions. In the last 2 minutes of cooking, add the green peas.
  3. When the pasta is al dente, drain and transfer to a large bowl.
  4. To the same bowl, add the carrot, yogurt, onion, burrito seasoning, bouillon, and pepper. Mix.
  5. To make the quesadillas, check to ensure the lentils are fully cooked. When they are soft through into the centre, drain well.

  9. To make the quick salsa, add the tomatoes, onion, garlic, salt, and pepper to a bowl. Mix.
  10. Cut the quesadillas into triangles and serve with the salsa and macaroni salad. Enjoy!

Cheri - Feb. 23, 2024, 4:12 a.m.

Another top-notch recipe. I didn’t have crushed tomatoes, but did have salsa (used a bit more since salsa does not have the same intense tomato flavor). I love your app! I had tried another vegan app and found the recipes difficult and bland. But your recipes are easy and so flavorful.

PUL Team - Feb. 23, 2024, 8:27 a.m.

Aw we're so glad that the recipe and the PUL App are being enjoyed, Cheri! Thanks for sharing your love and support. We have lots more delicious recipes coming πŸ˜ƒ

This is my all time fave!

Florian - Nov. 30, 2023, 10:36 p.m.

I liked it! The quesadillas could’ve used some vegan cheese though! 😏

Lucija - Sept. 21, 2023, 3:19 p.m.

Made it for myself and my non-vegan partner. After tasting his comment was: β€œare you paying for this app? Cause I’d be happy to do it!” 😜

Anna - Sept. 5, 2023, 9:08 a.m.

I was positively surprised with this one, it is very good! I recommend adding a bit of sugar in the salsa to counter the sourness from the tomato

Teresa - Aug. 22, 2023, 1:52 p.m.

This is my go to (like many others) when I don't know what to cook or to easily make something to bring to a friend's house.
Thank you as always Sadia & co!

Susi Moe - Aug. 11, 2023, 5:53 p.m.

This was very easy and delicious. I used cooked brown lentils from a can and sprinkled some shredded vegan mozzarella on top of the mixture in the Quesadillas. Soooo yummy, my picky eater husband loved this recipe too. Next time I will try it with some guacamole.

PUL Team - Aug. 11, 2023, 6:23 p.m.

Yayy so glad the recipe was enjoyed, Susi! Happy cooking πŸ€—

Nancy - July 5, 2023, 3:10 a.m.

Could you post a homemade recipe for the burrito mix? My store didn't have one, and I do prefer making my own spice mixes. I found one on The Tortilla Channel and it was an epic fail. I used one tablespoon and the lentils were so salty, we couldn't eat it. I liked the idea of using lentils instead of the usual red kidney beans and would like to try the recipe again. Also, I used one can of brown lentils (540 ml) and I'm wondering if the measurements were off as well.

PUL Team - July 6, 2023, 6:49 a.m.

Hey Nancy! We have a Homemade Mexican Seasoning mix here: pickuplimes.com/recipe/mexica…. Canned lentils are cooked rather than dry, so the weight will indeed be different πŸ€—

Alejandro - June 15, 2023, 5:15 a.m.

This was a delicious, unique meal - thank you so much for sharing it 🀩 my partner Jake and I loved it very much and will make it again. After using the crushed tomatoes for the lentil mixture, I just used the rest of the can to make the salsa (instead of diced tomatoes) and it worked great too! We also added a sprinkle of vegan cheese in the quesadillas 🀫
One thing I will say is - I know it’s in the photo, but maybe adding cilantro to the ingredient list could help people know it’s an option to incorporate it. It’s something that I glossed over when preparing the grocery list, but luckily I have a plant that I could pick some from - I truly feel like it helps to add a crucial dimension to the salsa and unify the meal as a whole ❣️ Thank you again for this one!

PUL Team - June 16, 2023, 5:35 p.m.

I'm so glad you both enjoyed it, Alejandro! And your wish is my command, I've now added the cilantro as an optional topping :)

Alejandro - July 2, 2023, 4:11 p.m.

Oh wow, thank you so much for taking my comment into consideration. I really appreciate you all :)

Ella - June 11, 2023, 6:30 p.m.

Delicious! I added some corn to the salad and used chickpea pasta in rotini shapes. Works great for meal prep.

Lauralyn - March 18, 2023, 12:13 a.m.

So good! I never used to be a fan of lentils, but since going plant-based, I've learned to enjoy them. This recipe might be my favorite way to eat lentils now.

Love the addition of olives, Salome - thank you!

Aimee - Dec. 30, 2022, 2:39 a.m.

First of all,so happy I stumbled upon you on YouTube! This app is amazing! Made this meal, and we both loved it. Pasta salad was flavorful and very comforting. Loved the lentil quesadillas. Easy to make and delicious. Love that there is leftovers.

Aw welcome to the PUL community, Aimee, and thank you for the very kind words πŸ˜ƒ

Pia - Sept. 9, 2022, 6:16 a.m.

I tried making this today for lunch and really liked it! I couldn't find any soy yogurt in my local supermarket so I just swapped it for an unsweetened vanilla almond milk yogurt I was skeptical at first with this substitution but it worked just fine! I will definitely be making this again πŸ€—

PUL Team - Sept. 10, 2022, 6:28 a.m.

So happy to hear, Pia, thank you!

Lu - Aug. 17, 2022, 8:42 p.m.

I had my doubts about this recipe and initially I was a bit disappointed by the lentil Quesadillas (I used half the fajita spice but they still remained quite flavourless for some reason, while the other half gave the salad QUITE the kick), but in the end the spice of the salad paired very well with the quesadillas. I also meal prepped this one and it just seemed to get tastier as the days went by! Became one of my favourite recipes and I can't wait to make it again :)

PUL Team - Aug. 17, 2022, 11:07 p.m.

Thank you for taking the time to share your experience with it, Lu, it's so appreciated! We're so glad it was enjoyed πŸ€—

Jess - June 29, 2022, 2:17 a.m.

I have loved the recipes from the budget challenge that I have tried. For whatever reason, in my area, I have had a really hard time finding vegetable bouillon cubes. They either aren't available or are VERY expensive. Any suggestions on how to substitute or where to find? Thanks!

PUL Team - July 1, 2022, 7:57 p.m.

Hey Jess, so glad to hear they're being enjoyed! In recipes, the vegetable bouillon cube when added with water can be substituted for equal parts vegetable stock or broth, adding salt or other spices to taste as needed. Since no water is added in this one, you could omit the bouillon cube and opt for salt and spices without the water to taste ☺️

Kare - Dec. 8, 2022, 3 a.m.

I exclusively use Edward & Sons bouillon! You can get it off their website for not a lot of money- they have tons of flavors but I always use the Not Chicken one even if a recipe says veggie bouillon, it just tastes really really good.

Tiffany - June 28, 2022, 6:06 p.m.

I have nothing but love for this salad and those quesadillas. I would never have thought to use burrito seasoning like this, but it works so well! It's delicious, easy to make and when I cook it for guests, they always love it and are impressed that it's so tasty. Thanks for giving me ideas and making me less stressed with original choices when cooking :)

PUL Team - June 29, 2022, 1:50 a.m.

Oh, so kind of you to cook for guests, Tiffany! We're so happy to hear the salad and quesadillas are being enjoyed ☺️

Brooke - June 22, 2022, 11:07 p.m.

Hi again! I don't have a whole carrot with me and am not able to buy one right now. In my freezer I have frozen peas and carrots that come is little squared cubes, is that ok to use instead?? Also can I use Greek yogurt instead of coconut yogurt, because I also can't buy that?? If not I do have coconut milk.

PUL Team - June 24, 2022, 7:26 a.m.

Hey Brooke! You may find the frozen peas and carrots a tad mushy but you can give them a try if that's most accessible. Greek-styled plant yogurts also tend to be much thicker and a tad more flavourful than alternatives in our experience. We recommend an unsweetened and as subtle tasting as possible yogurt to help balance well with the seasoning. We hope this helps for now and you enjoy the recipe if you're able to give it a try πŸ™‚

Acha - May 28, 2022, 1:39 a.m.

I made the quesadillas with black beans since we didn't have lentils... very tasty!

PUL Team - May 28, 2022, 10:57 p.m.

A lovely substitution, Acha, thank you!

Renee - May 27, 2022, 2:13 p.m.

I was really excited about this recipe. However, 2 tbsp of burrito seasoning was simply too much for the Mac salad. I'm not sure what happened. Unfortunately, I had to rinse everything out in a strainer and start over with new yogurt, and I decided to do the regular mustard and different seasoning. However, the lentil quesadillas were a hit...my husband loved them! :)

PUL Team - May 28, 2022, 10:40 p.m.

Hey there, Renee, thanks a bunch for sharing your experience with the recipe and for your adaptability as it didn't turn out as planned! It's really valuable to help PUL grow. We find that the type of yogurt and burrito seasoning used can impact this one quite a bit. For example, the unsweetened yogurt we used is quite subtle in flavour, but some brands have a more pronounced taste which may not balance well with the seasoning. So happy the lentil quesadillas were still enjoyed and thank you again, Renee πŸ€—

Brooke - May 20, 2022, 11:47 p.m.

Hi!! I am not able to but soy yogurt what other yogurt would you recommend I use or should I skip this step??

PUL Team - May 23, 2022, 2:12 a.m.

Hey Brooke, we recommend a neutral plant-based yogurt such as unsweetened oat or coconut yogurt. Anything flavoured or not subtle in taste, such as sweetened products, may impart an undesirable taste πŸ™‚

Brooke - May 23, 2022, 4:22 p.m.

Ok Thank you!!

Josie - April 12, 2022, 6:59 a.m.

Super yummy! Served it my family and they loved it! Pasta salad was fresh and absolutely delicious. I served the lentil quesadillas with fresh salsa and just a mashed avocado on top ((:

PUL Team - April 13, 2022, 2:26 a.m.

So glad it was enjoyed, Josie, it means so much!

Jack - March 19, 2022, 8:14 a.m.

The pasta was a bit odd tasting. But loved the lentil pockets!

PUL Team - March 19, 2022, 8:13 p.m.

Hey Jack, sorry to hear the pasta tasted odd. Our thoughts are it could be the yogurt. The unsweetened yogurt we used is quite subtle in flavour, but some yogurt brands have a more pronounced/sweet taste. Thanks for sharing the feedback, and we're glad you enjoyed the lentil pockets 😊

Florentina - Feb. 15, 2022, 10:02 p.m.

Hi Sadia, hi PUL Team. I tried today both the macaroni salad and the lentil quesadillas (scaled the recipe down to 1 person), and I want to share my experience and ask some questions.

1. The macaroni salad was far too spicy, and I think I know the reason, I overdid it with the fajita spice mix. I cooked the macaroni, salted them and then put half a tbsp of the spice mix (not leveled). I thought it wouldn't make such a difference, but it did. And also I think my yogurt was too sour, which didn't improve it.

2. Then, I made the lentil quesadillas and I had two problems. Firstly, I didn't know if I should add salt to the lentils and secondly, even after cooking them for like 30 min, it was really hard to smash them. The result: the filling wasn't holding together and falling of the wraps. This time I used less of the spice mix, and they tasted delicious but didn't have enough salt 😐.

Since I am not a professional cook, can you tell me if I should salt the lentils and to what ratio? And how to cook them properly so that they become soft enough?

Best regards :)

PUL Team - Feb. 16, 2022, 4:38 p.m.

Hey, Florentina, thanks for sharing! We’re disappointed the recipe hasn’t turned out as anticipated. The fajita mixes can totally give the macaroni salad a kick, and using fresh ingredients helps with flavour. As for cooking lentils, we recommend cooking them according to package instructions if possible. Usually, a 3 part water to 1 part lentil ratio works nicely. In general, lentils only need to be cooked for about 15-25 minutes, and will cook even faster if soaked for an hour or two ahead. Do you kindly remember what heat your pan was at? Perhaps increasing the heat a tad can help. Being sure to use lentils rather than similar-looking chana dal may also be worthwhile.

We generally don’t add salt to the pan as this can contribute to the lentils toughening up. Soft lentils are key for this one to ensure they mash. After cooking we can always add salt to taste 😊 We hope this helps for now, Florentina, and do let us know if you give the recipe another try!

Florentina Gashi - Feb. 16, 2022, 6:26 p.m.

Hey, :). Thanks a lot for your reply and your tips. I generally love your recipes and would love to give always 5 stars, so I think maybe the fajita spice wasn't the appropriate one, considering I should mix it with water and cook it (which I found out today). And it also has salt in it, which explains why the macaroni salad was too spicy.

When I try it again, I will definitely let you know!

Best wishes

PUL Team - Feb. 16, 2022, 9:40 p.m.

No problem, Florentina, we hope that if you give the recipe another try it's more successful! There are lots of fajita spices out there and many are great, although perhaps adding less to start and then adding more to taste will make sure it isn't too spicy 😊

Jeff W. - Feb. 15, 2022, 6:47 p.m.

We too are doing the five day meal plan, tonight will be meal three. I've made a large number of your recipes and they always turn out great. I saw someone comment from Melbourne, AU, about the local costs. I'm curious to know that too. We live in Wellington, NZ, and the shopping list as provide was $123NZD. Anyway, I really appreciate having PUL as a resource for reliable and interesting meal planning. Very healthy and helpful. Cheers.

PUL Team - Feb. 16, 2022, 5:05 p.m.

Hello Jeff, thanks for sharing how it turned out in Wellington! It's super helpful feedback to hear, and we're so glad the recipes are being enjoyed :)

Claudia - Jan. 24, 2022, 8:05 p.m.

So yummy and easy to prepare! Will take the recipe as a future staple.

PUL Team - Jan. 27, 2022, 1:29 a.m.

It means so much, Claudia, enjoy πŸ˜ƒ

Naga - Jan. 18, 2022, 9:37 p.m.

The macaroni salad is so yummy!! Texture is so smooth and it is very refreshing

PUL Team - Jan. 19, 2022, 6:53 p.m.

So happy it's being enjoyed, Naga!

Miranda B. - Jan. 7, 2022, 4:12 p.m.

I echo Jordan below… the quesadillas were a huge hit! But the macaroni salad was a little weird for my family and me. I can’t put my finger on what was a little odd about it, but that’s okay. Wish I had something more constructive to offer! I’ll serve the quesadillas up next time with a yummy soup :)

PUL Team - Jan. 7, 2022, 9:33 p.m.

Hello Miranda, thanks a bunch for taking the time to share the honest feedback with us. It's so valuable to help us improve moving forward. We've noted it down, although please feel free to let us know if anything else comes up! For others, using a flavoured or sweetened yogurt has created a less desirable macaroni salad. We're so glad the quesadillas were enjoyed and soup sounds like a lovely pairing in any case 😊

Jordan - Oct. 19, 2021, 2:22 a.m.

The lentil quesadillas were good- my boyfriend and I both enjoyed them a lot! The macaroni salad was odd and I kept looking back at the recipe after tasting it to see if I'd missed something. It was pretty easy to make, but would probably only make the quesadillas again :)

PUL Team - Oct. 19, 2021, 3:44 a.m.

Hi Jordan, thank you for the honest review! It's really appreciated to help PUL grow and improve. Using a flavourful spice mix and unsweetened yogurt (some people have used flavoured or sweetened yogurts in the past by accident 😊) are two key things we can think of for the salad to help improve it. So happy the quesadillas were enjoyed regardless though!

Katy - Sept. 21, 2021, 10:29 a.m.

I think I'll have to give this recipe another try! Macaroni salad came out delicious, I added sour cream instead of yogurt to use it up. As for lentil quesadillas, that's when I had a little trouble :) so I cooked lentils according to package instructions which said to cook them in salted water. Now according to the recipe, lentils are mixed with burrito spice mix OR Mexican seasoning later which also contains salt (at least my mix does), and so the quesadillas turned out way too salty :D Next time I'll cook the lentils without adding salt to the water and see how it goes. Oh, btw I used red lentils cause I already had some in and thought I'd use it up instead of buying another package.
P.S.: quick salsa sauce came out amazing!

PUL Team - Sept. 22, 2021, 4:44 a.m.

Hey there, Katy, thanks for sharing your experience with this one! So sorry to hear about the saltiness. We would also recommend opting not to add salt to the lentils when cooking next time. We hope you enjoy the quesadillas if you give them another try πŸ˜ƒ

Bekah - Sept. 20, 2021, 8:59 p.m.

Amazing! The Mexican style macaroni salad is so creative and fun! This recipe was awesome :)

Merhil Rosales - Sept. 17, 2021, 3:37 a.m.

Love the recipe

Hannah - Sept. 16, 2021, 5:34 p.m.

Absolutely loved this recipe! It was so simple to make and the lentil quesadillas were more delicious than I expected! Even had enough leftover for lunch the next day πŸ˜‹

Bec - Sept. 12, 2021, 6:14 a.m.

I will never get enough of this salad. I am blown away by how yummy this is. So simple and easy to make yet it rocked my world. Since I couldn't find soy yogurt and had bought coconut yogurt which hadn't worked well in another recipe, I substituted it for a vegan herbed mayonaise and just wow, so yummy. The bread was good too but not the hero for me. This will be a weekly meal for me moving forward.

PUL Team - Sept. 12, 2021, 8:05 p.m.

Aw, thank you for the glowing review, Bec! We're so happy to hear the recipe is being enjoyed πŸ˜ƒ

L - Sept. 9, 2021, 10:35 p.m.

Step 2. Is it in the last 2 minutes or the first two minutes that we had the peas ? I'm confused

PUL Team - Sept. 12, 2021, 2:59 a.m.

Hey there, L, thanks for bringing this to our attention! Step 2 of the instructions was meant to say to add the peas in the last two minutes of cooking. Our sincerest apologies for any confusion this caused. We've gone in and updated the recipe instructions to make sure it's clear now πŸ™‚

Celina - Sept. 9, 2021, 10:19 p.m.

This was sooo good! Especially the quesadillas 😍
My sister usually doesn't like lentils but she really enjoyed this.
Thank you for all your hard work and your great recipes!

PUL Team - Sept. 12, 2021, 2:53 a.m.

Hi Celina, thank you for the very kind words! We're so grateful the recipe was enjoyed by your sister too :D

Lara - Sept. 5, 2021, 3:53 p.m.

This was super delicious πŸ˜‹πŸ₯° I love the freshness of the macaroni salad combined with the lentil quesadillas πŸ‘πŸΌ I had one zucchini left, so I shredded it as well and cooked it along with the shredded carrots, because my body can digest the veggies better this way 😊 I also switched peas with edamame and seasoned it without the burrito spice mix, but with everything that is in the spice mix and some fresh garlic 🀩
You're absolutely right that this is perfect for picnics or to serve for guests πŸ˜ŒπŸ’š
Thank you so much for sharing this delicious meal!

PUL Team - Sept. 5, 2021, 8:58 p.m.

Mmm sounds so delicious, Lara, thank you for taking the time to share your experience with the macaroni salad with lentil quesadillas. It means so much πŸ˜ƒ

Helen - Aug. 31, 2021, 2:24 p.m.

Hi Sadia! Just made the macaroni salad. So quick and easy! Thinking of adding a teaspoon of ketchup to the sauce next time to add some sweetness and see how that goes. =)

Also made the burrito spice mix. Thought I'd let you know that when clicking on it in the macaroni salad recipe it opens a link to a sexual health book. Probably not the kind of spicy you were going for! ;D

PUL Team - Sept. 1, 2021, 2:24 a.m.

Hey there, Helen, a lovely idea to add ketchup for sweetness! We appreciate you pointing out the link as well. Indeed, not the spice we were going for πŸ˜› I've just clicked it now and see it directing me to the correct place, so I suspect it may be due to different regions automatically redirecting from our intended link. We'll do some digging to see if there's any fix to it though, so thanks for letting us know, and happy cooking πŸ€—

Jeff W - Feb. 19, 2022, 8:12 p.m.

I also got a link to a sexual health book. For debugging, this is the link in the source code... https://amzn.to/3pqtdpe

PUL Team - Feb. 19, 2022, 8:34 p.m.

Thanks so much for sharing that you were experiencing the same, Jeff, we've removed the link for now. Thanks a mil!

Jamie R - Aug. 30, 2021, 8:31 p.m.

Both of these recipes are wonderful and packed with flavor! The only thing I would say is after eating both dishes together, since they both used the same spice mix they had some taste similarities. I think for my leftovers I'll pair the macaroni salad with a sandwich or veggie burger to have a bit more of an eclectic flavor mix - but again, I was not disappointed by either dish - both were incredibly filling, delicious and wholesome!

PUL Team - Aug. 31, 2021, 2:16 a.m.

Hi Jamie, thanks for the review! It's super helpful to ensure we continue to improve and grow πŸ˜ƒ

Since we were reducing the price for the budget challenge we opted to use the same spice mix, although feel free to use an alternative spice mix if desired. We love the alternative pairing ideas for the macaroni salad too though 😍 Happy cooking!

MaryAnn - Aug. 27, 2021, 3:47 p.m.

Hi there! This looks like another amazing recipe of yours I would love! Unfortunately I can’t get the link to the burrito spice mix to work :/ Is there anything that I can substitute? Thanks!

PUL Team - Aug. 28, 2021, 7:03 p.m.

Hello MaryAnn, thanks for the question! The link appears to be working from our end, but it may redirect differently based on where home is for you. It takes us to a Frontier Mexican Seasoning spice, although any taco/burrito spice mix available at your local grocery store would do. You might find it in the international aisle or in taco/burrito kits if it's not found individually πŸ™‚

An alternative may be to make burrito seasoning at home with spices accessible to you. We have a sample recipe (pickuplimes.com/recipe/mexica…), although there are lots of other ideas online. We hope this helps πŸ˜ƒ

Thank you so much! That is super helpful! I am actually where the Frontier headquarters is located! My favorite spice distributor :)
Appreciate your reply!

Unfortunately, my lentil filling did not stay together well but I still really enjoyed this dish! The pasta salad complimented the tortillas really well with a certain freshness from the yoghurt :)

Hey there, Clare, thanks for the review! We're so glad you enjoyed the quesadillas. If you give the recipe another try, making sure the lentils are cooked enough to mash more should help the mixture stick together. If you're interested, adding some plant-based cheese is another idea πŸ™‚

Awesome recipe! So delicious, tasty, flavourful, fast, easy, cheap! Nothing more to say. Will definately prep this salad in the future a few times!

Manon - Aug. 23, 2021, 5:55 p.m.

I'm really enjoying these recipes. The salad two days ago was great and this macaroni salad is very tasty too. I do however have a question. Where do you buy dry green lentils? The lentils I found need 8 to 12 hours of soaking time in water and 90 minutes of cooking time which seems like a lot. Had to swap the lentils in the patty recipe for a can of lentils cause I found out to late.

PUL Team - Aug. 25, 2021, 6:04 a.m.

Hey Manon, I'm so glad to hear you're enjoying these recipes 😊 It sounds to me like what you've bought might be either beans or "chana dal" which indeed requires a long soaking and cooking time. Typically, most lentils - which are flat and small - only need to be cooked for about 15 - 25 minutes, and will cook even faster if soaked for an hour or two ahead. We buy our lentils from Albert Heijn, but almost any shop should carry them. In case it helps to see the packaging, these are the ones we used: https://www.ah.nl/producten/p… - I hope this helps for now πŸ€“

I love how you are basically making three meal components all within budget and it all tastes so good! I had never tried making pasta salad with yogurt before and it is a sure fire winner. I found this recipe quick and easy to make which was another bonus!

Gabrielle - Aug. 17, 2021, 4:04 p.m.

Thank you so much for sharing this recipe, im excited to try it:) Do you think that vegan mayo would be a good substitute for the soy yogurt? I cant find a soy yogurt that is unsweetened

PUL Team - Aug. 19, 2021, 11:31 p.m.

Hi Gabrielle, we haven't had a chance to test it out but we imagine that vegan mayo could work with some experimenting! You may want to start with less mayo and add more based on your preferences. Let us how it goes if you give it a try ✨

Just made this recipe and it is delicious! It’s different than anything I’ve made before and it turned out perfectly! I especially appreciate the budget friendly aspect!

Nadia S - Aug. 14, 2021, 2:49 a.m.

I made this an hour ago and I didn’t expect it to exceed my expectations! Wow. All of it was amazing! This recipe was really packed with flavors!

Alexander - Aug. 11, 2021, 6:58 p.m.

Those Quesadillas probably were the best I ever ate. Even better than all the non vegan quesadillas I ate in my life.
I added 2 tablespoons of Salsa Verde and a tablespoon if flour to bind. I also made a quick guacamole as a side. I neither missed the meat nor the cheese.
The pasta salad was decent, a solid support cast to those awesome Quesadillas.

We're so happy to hear the recipe was enjoyed, Alexander, thanks for sharing :)

Astrid - Aug. 11, 2021, 3:24 p.m.

Just made the macaroni salade! Our family loves it :) we also added some pickles! Thanks again for these amazing recipes <3

Alex - Aug. 11, 2021, 8:30 a.m.

My wife and I watched this video on the weekend and decided to basically make this our meal plan for this week. So far we had the roasted veggie salad which was delicious (even though my oven seems to be more powerful than yours) and the potato-lentil-pattie wraps, which also were really tasty.
Looking forward for the rest of the week. Hopefully the rest of the meals will also be candidates to join our "weeknightmeal rotation"

Hey, Alex! We're so thrilled the recipes have been enjoyed so far 🌻 Happy cooking!!

Just made this and we totally loved it! Thank you for the recipe! So simple and quick to prepare.

Charlotte - Aug. 7, 2021, 1:33 p.m.

We just finished making and eating the quesadillas and they were delicious!! The salsa definitely brought it up a notch. My filling didn’t stay together that well, not sure if I needed to mash it more or add any more liquid, but the taste was still delicious. Thanks for another great and simple recipe!

PUL Team - Aug. 8, 2021, 10 p.m.

Hi Charlotte, thanks for sharing the review with us! It's so appreciated☺️We've found making sure the lentils are cooked enough to mash indeed helps the mixture stick together :D

Charlotte - Aug. 8, 2021, 10:51 p.m.

Thanks for the tip! I’ll try cooking them longer next time. So far I’ve made 3 of the 5 recipes from the video this weekend and they have all be wonderful and unique despite using the similar ingredients. It’s been fun trying new things 😊

PUL Team - Aug. 8, 2021, 11:34 p.m.

Aw this is so incredible to hear, Charlotte! So glad you're having fun with the new recipes 😊

Tash - Aug. 6, 2021, 5:48 a.m.

I’m going to give this challenge a try. Very curious to see how much the ingredients cost here (Melbourne, Australia) although I know it will still be budget friendly. Thanks for the great recipes and inspo :0)

PUL Team - Aug. 7, 2021, 1:53 a.m.

Let us know how it goes, Tash, we hope you enjoy the recipe :D
