Minestrone doesn’t always need pasta, and in this version, the starch comes from hearty potatoes instead. Packed with fresh veggies and protein-rich pinto beans, this quick minestrone is both comforting and nourishing. A zesty kick from vegan green pesto and Italian spices brightens the broth, while a sprinkle of vegan parmesan adds a rich, savoury finish.

This one is like spring in a bowl! It tastes really fresh while also being quite a comfort meal. We added a bit more liquid and some nutritional yeast which worked really well. Definitely a new staple for this time of year and a great way to use asparagus.

It’s so freaking delicious it’s a crime! I made my own pesto just because I felt extra that day but I fully believe it elevated the flavor of the soup. It made me feel cozy and warm inside so it’s perfect for a rainy day, sick day, or even a lazy day when I want to spend minimal time in the kitchen.
