1¼ cups (170g)all-purpose flour

2 Tbsp (25g)granulated sugar

1 tsp (4.5g)baking powder

½ cup (130g)unsweetened soy yogurt

1 Tbsp (15ml)unsweetened soy milk

4spritzes of cooking oil spray
Coating
-
⅓ cup (65g)granulated sugar

1 tsp (2.5g)ground cinnamon

3 Tbsp (43g)unsalted vegan butter, melted
Directions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the yogurt and milk and combine with a spoon.
- Gently bring the dough together into a ball with your hands, avoiding any kneading. The dough will be very soft; if it feels too sticky, add a small amount of flour as needed.
- Divide the dough into equal portions and roll each one into a small ball*.
- Preheat the air fryer to 350°F (180°C)**. Place the dough balls inside and lightly spray them with oil.
- Cook for 10 - 12 minutes, or until the dough balls are lightly golden***.
- Meanwhile, combine the sugar and cinnamon in a small bowl.
- Melt the butter in a separate small bowl. Once cooked and while still warm, dunk the balls into the melted butter.
- Then coat with sugar and cinnamon mixture. Enjoy!
Notes
- * The original unscaled recipe makes 8 donut holes in total.
- ** If baking in the oven instead, line a baking tray and preheat to the same temperature using the fan setting rather than conventional top–bottom heat.
- *** If using an oven, bake for 18 - 20 minutes in total, or until lightly golden.
Storage
- Best to enjoy the day they are made as they tend to get hard with time.
