If you have any leftover rice, this recipe is a great way to use it up. We also love batch-making this recipe! We enjoy a couple of burger patties the night they're made, and we freeze the rest. It makes for a speedy dinner when you're short on time.

Ingredients

Burger patties

  • 2 Tbsp (14 g)
    ground flaxseeds
  • ¼ cup (60 mL)
    water
  • 1 Tbsp (15 mL)
    vegetable oil, plus extra for frying
  • 2
    medium onions, diced
  • 2
    cloves garlic, minced
  • 4.9 oz (140 g)
    button mushrooms, minced
  • ⅓ cup (29 g)
    raw walnuts, minced
  • ½ Tbsp (3 g)
    ground cumin
  • 1 tsp (2 g)
    ground coriander (optional)
  • 1½ cups (270 g)
    cooked brown lentils
  • 1 cup (195 g)
    cooked brown rice
  • 1 cup (108 g)
    breadcrumbs
  • 1 Tbsp (2 g)
  • 1 Tbsp (15 mL)
    ketchup
  • 1 pinch
    ground black pepper

Assembly

  • 1 cup (20 g)
    arugula
  • 2
    avocados, sliced
  • 2
    medium tomatoes, sliced

Directions

  1. Add the ground flaxseeds and water to a large bowl, mix, and set aside.
  2. Add the oil to a sautΓ© pan on high heat. When hot, add the onions and garlic and sautΓ© until lightly golden, about 5 minutes.
  3. Then add the mushroom and walnuts, and cook until most of the moisture has evaporated, which takes about 5 - 8 minutes.
  4. Add the soy sauce, cumin, and coriander and continue to cook until all the moisture is evaporated. Remove the pan from the heat.
  5. Add the lentils to the same bowl as the flaxseeds and mash as best you can using an immersion blender, potato masher, or fork.
  6. Transfer the cooked mushroom mixture to the bowl, along with the remaining patty ingredients. Using your hands, mix well and then form into burger patties.
  7. Heat up a bit of oil in a large pan on medium heat. Cook the patties until golden on each side, about 2 - 3 minutes per side.
  8. When the patties are ready, assemble your burger, and enjoy!

Storage

  • Keep the patties in an airtight container in the fridge for up to 3 days.
  • Store well sealed in the freezer separated by pieces of parchment paper for up to 1 month.

I love the flavor! We made this with 2 swaps, I used quinoa instead of rice and fennel seeds as a coriander replacement since I didn't have any on hand. This was yummy. If your want to skip the forming into burgers part, we used this as a base for making bowls. It worked just as well!

This veggie patty was so flavorful and seems so nutritionally balanced, with the complete protein combo of lentils and rice. The walnuts are essential for a lovely crunch. I let it sit for a half hour in the fridge so the breadcrumbs could absorb any moisture. It's definitely a project but well worth the effort. I love that I could taste the mix all along the process in case I wanted to adjust the flavor. I'm not vegan but feel super inspired by your wonderful recipe!

Hey Alyssa, were the ingredients and portion sizes followed? If so, we suspect there was extra moisture lingering in the mushrooms. Mushrooms have quite a high water content so cooking them until most of the moisture has evaporated helps avoid too much from getting into the patty mixture. If you're finding the patties too wet to stick together after cooking the mushrooms, adding oats, breadcrumbs, flour, ground nuts or more ground flaxseed could help πŸ™‚

Hey Alyssa, it's possible that the flax mixture needed more time to thicken or the dried lentils were overcooked. We'd recommend cooking dried lentils until they are tender but not overly mushy. This can help achieve a thicker consistency for the mixture and result in a burger that holds together better if you give the recipe another try πŸ€—

I am curious about the salt content per pattie. It seems a bit high based on one serving.Would you be able to tell me which ingredients cause this. The soy sauce and ketchup is minimal for an entire batch.

Hey Karen, thanks for the kind words and question! We've gone into our system and fixed our breadcrumb file which may have been overinflating the sodium amount. Aside from breadcrumbs, the soy sauce, ketchup, and burger buns also have sodium which can add up. For example, one teaspoon of sodium-reduced soy sauce still has around 190 mg of sodium πŸ™‚

Wait to add your garlic until the onions are 1 or 2 minutes from being done. Over toasted garlic will sour an entire dish. These burgers squish out but taste good.

Hey there, Agathe, did you already give it a try? The rice helps the patties stick together so we're not confident in recommending an alternative. Rolled oats may work better as a substitute for bread crumbs in this one since they have more texture than flour. If you do experiment with either though and you're finding the patties aren't sticky enough, adding oats or ground flaxseeds gelled in water could help. Do let us know if you experiment with it πŸ˜ƒ

Hey Gabby, we haven't tested it out so we can't say with absolute certainty. Perhaps eggplant, lentils, beans, quinoa, shredded carrot, or potato are some alternative ideas. The burger may have a slightly different texture and taste if experimenting with these. Hey Annexus! Beans work well as a substitute for lentils in this one since they give a bit of a mushier texture. We suspect millet or rice would still work nicely if desired though. The texture of the burger will just change a tad 😊

Hey Alesha - lovely questions! You can thaw the patties in the fridge or on the counter briefly before cooking. We recommend cooking them with vegetable oil on medium heat until golden on each side, which remains a few minutes per side. You can add a bit more oil if you need to as well. Those are simply the best burgers! I have made them already many times, always as a batch and freeze some for later. Also, I enjoy these patties not just as burgers, but simply with some sides, and it makes a balanced and delicious meal. I grew up in Ukraine, and one of our traditional meals is to have a meat patty with some side (often buckwheat), since I have stop eating meat for the past 4 years, I was so happy to discover this patties recipes, as although the ingredient list is totally different, somehow the texture and flavour kind of resembles my mum's patties :D and they go great with the buckwheat as a side.

Hey PUL folks! Thank you so much for your help re: wild rice. <3 I did make this recipe and found that the patties were soggy and didn't really cook through and hold together. HOWEVER, the flavor was fantastic, my friend was obsessed and they can't wait to make it for their family, and together we came up with a few ideas for a fix!

I actually don't know if it was related to the wild rice -- do you think it may have been? I think there was too much moisture for two other reasons: I cooked the lentils until they were mushy (I thought that would be preferable, since you mush them up anyway, but I believe I was wrong oops). And we used gluten-free bread crumbs because my friend is allergic to wheat, but they pointed out that gluten-free bread doesn't soak up moisture as well as glutinous bread -- just because of the ingredients used, like seeds and different kinds of starches.

SO! We're going to try again with firmer cooked lentils and more breadcrumbs; I'm also going to reduce the number of onions because they were a bit overwhelming, and make sure to cook down the onion/mushroom mixture verrrrry thoroughly. Maybe we should do it with brown rice, too, although I love the flavor of wild rice so I may go for the mix. I will report back yet again! <3 Thanks again, team!

Hey Anna, super happy to hear you guys enjoyed the flavour of the patties! With regards to the texture, for sure, cooking the lentils until fully cooked, but not too mushy, should help. Another thing that might help is making sure you cook the mushrooms until they dry out quite a bit. Otherwise, the mushrooms can also have a lot of moisture held in them that can make the patties feel wet. I personally don't think gluten-free breadcrumbs should be an issue, so feel free to use that again if you'd like. With that said, you can always add a bit more breadcrumbs than a recipe calls for if you find the mixture is still too wet. It's something we do often as well. It's an easy ingredient to add a bit more of until you reach a consistency that's easy to work with. I hope this helps for now, and all the best for when you try them out again 😊

Psst PUL Team, I actually got confused the other way, because I had remembered this as being made with wild rice, cooked a pot of wild rice, and then showed up to this page and was like "wait.... am I misremembering or did I just get gaslighted...??" Haha of course I'm teasing <3 but it did give me pause. Maybe add wild rice as an option with brown rice in the ingredients list? Also, if I had never seen this before, I feel like the header and subtitle would make me think I could use leftover white rice (although maybe they can! in which case never mind me!)

Just a heads up, though, that using solely wild rice might result in patties that don't bind together as easily. When wild rice is cooked, it's quite a bit more firm than brown rice. The stickiness of brown or white rice helps keep the patties together a bit better. Curious if you tried it out and what you thought of the patties with the wild rice? πŸ€“

Hello again! We did end up grilling these, and they turned out AMAZING. You were right about the mixture; it held up really well and was a breeze to work with. We didn't even need to brush them with oil before throwing them on the grill.

But beyond their supreme grill-ability, these are the BEST burgers I have made in my nearly ten years of veganism. Such good flavor! Such good texture! We'll definitely make them again and again. Thanks for the recipe!

It does take up a lot of time (perhaps because I'm not familiar to the recipe), but the crunch from the nuts und the rich flavours of the spices are incredible!

Best vegan burgers I have personally ever had. My mom actually made these for me and said they were a very involved recipe, BUT they are the best I’ve ever had. I mean this as a good thing but they gave me a VERY mcdonalds like burger flavor

These burger patties are the best vegan burgers i’ve ever tried! I usually prepare 8 patties and then i freeze them, ready to use for my lunch at work. Give them a try, they have an extremely meaty texture and they fill you for lots of hours.

The burger was delicious, though a bit mushy. Is there any way that I can remedy this? Maybe cooking the lentils a bit less? Congratulations, Sadia, on passing your exams, by the way :)

For the mushiness, ensuring the lentils and rice aren't overcooked is a good idea, although excess moisture or cooking the patties at too high of a temperature (meaning the outside crispens too quickly while the inside doesn't have a chance to cook as much) are more likely culprits! We'd recommend making sure the moisture is mostly evaporated in steps 3 and 4 and suggest cooking the patties at a low enough temperature to help the inside cook more without the outside getting too crunchy too quickly. Glad you enjoyed the burgers despite this 😊
